So I took Matt in on Friday, because his health was going downhill fast, and the vet said he thought it was URI and gave him Omoxocillan. He's doing better, and has his appetite back, but I don't see him drink unless it's mixed into his food.....He's just not interested in his water bowl

I'm adding a little water to each meal(he's on wet) and between meals I've given him a tsp of tuna juice in 1/4 cup of water with a tsp of tuna in the bottom of the bowl. He laps up the liquid to get to the fish. I think I'm mixing about 3/4cup into his wet meals over the course of the day. Is this going to be enough for him until he starts drinking of his own free will again?

In general, cats should get moisture from their food. This is why dry kibble isn't the best option for feeding cats. Since you've adding even more water to his food, it's possible that his water needs are being met. Remove the same amount of water from his water bowl and see if that looks about right. Of course check his skin tenting to see if he's dehydrated, how much he's urinating, etc.

Didn't he get fluids at the vet?  (I may be confusing you with another poster.)  If so, the body is still absorbing the fluids.  If you're adding fluids in his wet food, then he's probably getting enough.  Does the skin on the back of the neck snap back when you pinch it?  He may also be drinking when you're not around.  Is he urinating in the box?

No, the vet said he was 5-7% dehydrated and I was doing well by shringe feeding him water. I guess he wasn't worried. He's more hydrated now than he was on Friday, his skin (almost) settles back when I scruff him  and his eyes aren't sunken. I want to make sure that the respiratory infection is the ONLY thing his body has to contend with, so he can get better faster. His box usage looks normal too...perhaps even a little heavy on the urine side

As long as he's got normal urine output, I would think he's doing okay with the water you're adding to his food and what he gets in his food.
