Good morning! And Happy Friday!

We are in the height of summer (in the northern hemisphere, that is) and the gardens are going strong.

What's your favorite fresh vegetable and how do you like to prepare it?

For me, it's tomatoes, picked fresh, rubbed on my sleeve to clean and....chomp! That's how my dad and I would eat them. He always had tomato plants out back behind the house and he and I would go out and pick two tomatoes. He carried a salt shaker with him and that's how we ate tomatoes.

But I won't turn down a good BLT!

There really isn't a particular vegetable I'd call my favorite, because I like everything except parsnips and kale (though I eat them, too). One thing I miss is turnips or "Swedes", because Germans consider them (and corn) "pig food" and they're hardly sold anywhere around here. Ditto sweet potatoes.

Ooohhhh, there's nothing like a fresh tomato picked off the vine!  

But my very favorite is a red bell pepper.  I eat them like apples.  Yum.

I'd have to say bell peppers too.. I make them in almost everything.. though my favorite is sausage and peppers (sometimes with onions too) and Stuffed peppers

Okra! I miss it so much. I can find it here once or twice a year, if I'm lucky. I eat 'em raw, steamed, fried, any way. Spinach, artichokes, and beets are also up there favorites, but not as tasty as OMG okra.

I LOVE LOVE squash! Any and all types but my favorite is Summer and Butternut squash. You can fry, boil, bake, steam and even grill squash. The flavor will change depending on the type of squash and how you cook it. In fact just thinking about squash is making me :drool: :lol3:

I don't know if I have just one favorite or a most.  I eat my peas fresh from the garden (or cooked; but not the ones I grow, those get eaten straight from the pod!).  And I love tomatoes, cucumbers, summer squash and zucchini sauteed with onion and a little butter!  I love carrots, broccoli as long as it's cooked, sugar snap peas any ol way....  Lettuce, beans.  Yummy!

Asparagus -- I love them just slightly cooked, either on the grill (tied together in twine as bunches) or skillet, with maybe a little salt and/or butter, and lemon. Mmm... My second choice would be lettuce. I love baby lettuces and salads. I make my own dressings (starting with the usual French recipe: vinegar, good mustard (Dijon, whole ground, etc.), and oil. I like mine a little heavier on the vinegar-mustard and light on the oil. I add sugar to lessen the acidity if sharing with others, but prefer it without sugar. I add various spices and herbs, and I also vary the type of vinegar -- I don't usually use plain white vinegar, but I use just about everything else depending on what I'm going for. Oh, and cucumbers. I love cucumbers, too, especially with tomatoes and fresh dill.

Tomatoes (and bell peppers) are fruits ;) :tongue2:.

I love tomatoes right off the vine. However, I have some kind of weird reaction if the juice gets on my hands or face (anywhere but the inside of my mouth). So I have to be VERY careful when eating one whole! :lol3: I also like bell peppers and sugar snap peas (my mom's Quaker parrot likes them too. She says "peapods!") and broccoli. And I try to eat a baby greens salad every day.

Must totally agree here down to the sleeve rubbing ... and chomp!   We still regularly eat 'mater sammiches with mayo & heavy black pepper.  My Mom would stand over the sink and munch 2 or 3 at a times from their little garden.

Fresh Spinach! I love it as a salad or I put it in my burritos with refried beans, sour cream, raw onion, tomatoes, bell peppers and a bit of shredded cheese.

peas... I when I'm down in Tasmania I stand in my brother's veggie patch and just work my way through them... pod them, eat them, pod them, eat them.. It's like my Southern pea-eating ritual.

I just made a fava bean dip that is amazing!  Blanch beans and throw in a processor with fresh parsley, fresh garlic, salt, cumin and grated parmesan. Serve warm with tortilla chips.  Oh YUM!

Oh yeah--I love hummus!  Have you ever had green garbanzos? Our grocery store had them in the frozen section and I cooked them up like peas.  Delicious!
