Many brands of wet food are 78% moisture, yet the consistency in pate style ranges from runny porridge to firm mashed potatoes. How can this be? Is this due to the other ingredients?

Probably how finely ground the meat in them is. Also, the firmness of the original meat - chicken and turkey are firmer than fish, etc.  At least, that seems logical to me.

If you got that 78% from the guaranteed analysis, that's the *maximum* moisture content. The actual could be less. Also, some ingredients will absorb moisture and make the food seem more firm while others won't.

Ah, that makes more sense than my thinking. I see all the wet food I feed says 78% max moisture. It never occurred to me it could be less.

The other day, I opened a can of Before The Grain's Salmon (which has whitefish in it also) and it was a puddle of moisture.  It was the first time I had ever purchased this flavor before, I try and stay away from seafood but on occasion I give it as a treat.  I was surprised at how mushy it was.  Every other brand I'd ever gotten before that had fish you could at least discern that it was fish.  This just looked, well, totally unappealing and I typically like their products.  At least I'm sure they got a good amount of liquid that meal!
