Rick's parents are coming for dinner on Sunday.....Rick always takes his mom to church and, on the way home, he'll stop and pick up his father. I finally figured out what to make for dinner; I wanted it to be simple and not a lot of fussing.

Beer-Marinated Flank Steak

Crispy Potato Fans

A simple veggie salad

Garlic Parmesan Rolls

Mile High Lemon Meringue Pie

Rick can do the steak on the grill. I did a dry run of the potato fans earlier this week and Rick said they were really good. Recipe is from Cook's Country.

I make a good tangy tomato salad dressing that is lower in fat and calories, so that will work for the salad. The rolls can be made Saturday night and thrown in the fridge to rise overnight. Then all I have to do is throw them into the oven on Sunday.

While I've not made this particular lemon meringue pie, the recipe is from Cook's Country, so I know it has to be good. I can throw that together on Sunday morning while they're at church. For some reason, I'm hungry for lemon meringue pie!

On Saturday afternoon, we're going to hit a local nursery for veggie plants for the garden. While we're there, we'll pick a nice flowering plant for his mom. I can use it as a centerpiece for dinner on Sunday and then she can take it home.

His mom likes to come down for dinner, so I think that will be nice treat for her....she doesn't have to cook. We would take them out to dinner (and then I wouldn't have to cook either), but Rick's father refuses to go out to eat. Period. No argument.....he will not go. Not for any reason. This is the next best thing and I know she'll enjoy it.

What are you going to do for your mother on Mother's Day ? My mom lives in Chicago and I live in Ohio so we won't be together to do things like dinner and just enjoy each other company  I miss her alot. I'm sending money to my younger brother to get her flowers for sure.

We're going over to the in-laws house and cook his mom a dinner. I'm not sure what yet, she is on a soft diet. We got her a beautiful fake diamond and gold heart necklace from J C Penneys too. My mom lives 70 miles away so she's getting a card and a call, then we'll see her Monday, my 5 year old grandson's preschool graduation, I'm so excited! She'll get a necklace too. At that age they LOVE jewelry. I'm curious too about that tangy tomato salad dressing, it sounds good, can you post it please?

Sounds wonderful, Pam! You are such a good DIL!!! I absolutely LOVE Lemon Meringue pie and mile high sounds even better.

My daughter is coming today for the weekend. Sunday we are going to out for lunch at The Cheesecake Factory so I can have my favorite dessert. I actually hate cheesecake :lol3: But at the CKF, the cheesecake doesn't taste like cheesecake. ;)

My Mother is in Heaven. I miss her. We will do church and then go out to eat somewhere.

My mother and Paul's mother have passed on. It's very sentimental to remember my mom on mother's day, and I wish she could have been here with us.

Nothing special planned for Sun. We are definitely going to use our Red Lobster gift card tomorrow (Sat.) as now I can eat comfortably.

I hate to hear of mothers being in heaven with mothers day so near. They deserve to be celebrated too. My mother in law is in heaven since 1988 and we had some wonderful times together.  ( Prayers )

Sure! Here you go! Don't let the ketchup fool you....we love this dressing. It kind of reminds me of the tomato dressing from Outback Restaurant.

TANGY TOMATO SALAD DRESSING                                                    

2/3 cup ketchup                                                             

1/3 cup water                                                                          

¼ cup granulated sugar (can use substitute for part of sugar)                                           

¼ cup white vinegar                                                       

2 tablespoons olive oil    

¼ teaspoon coarse black pepper        

¼ teaspoon garlic powder        

¼ teaspoon cayenne pepper

¼ teaspoon onion powder

Dash salt

Combine all ingredients in a small saucepan over medium heat. Bring to a boil, whisking often, then reduce heat and simmer, uncovered, for 5 minutes. Cover the dressing until cool, then refrigerate until well-chilled.

Makes about one cup. Keeps for about one week.

Why?
You know, we don't know why! It's very frustrating. He hasn't been out to dinner in about 20 years. He doesn't go anywhere anymore, if he can avoid it. He laughs about it, says he's married to the best cook in the world and his DIL is the second-best cook, so he doesn't have to go out to dinner. Sometimes I honestly think he's proud of the fact that he doesn't go anywhere. But it's really frustrating for us and especially for Rick's mother. She used to be able to get out with her friends; they would all go out for lunch and then to bridge club once a week. But she's in her 90s and many of her friends are now either gone or in nursing homes. 

His dad won't even go down to visit with our kids and grandkids anymore. And I know the day is coming when he will no longer come down to us....and we only live about 4 miles away. Rick brings them down to us and then, when they're ready, he takes them back home....they don't have to drive here. 

We do try to get her out as much as we can. We'll take her shopping and then to lunch or dinner, things like that. I'll take her to the library and then out to lunch. And she enjoys coming down to us for dinner, too, so that works. 

When I know I'm going to have a day of baking, I'll run up in the morning and get Rick's mom and bring her down to me. And we'll spend the day together baking. She sits and forms yeast rolls or she'll decorate cookies, whatever she can do while sitting at the table. She really loves to bake and this is a way that we can spend time together. We'll try out new recipes for breads or whatever she wants to try. She'll stay for dinner and then Rick will take her home. (I used to do that with Grandma, too, bring her down to spend a day with me. And I did it with my mother a couple of times. I don't know why my family time is centered around baking, but it is!)

Winchester- that kind of sounds like my fil.  He HATES going out to eat- about the only place he will go is Captain D's.  When we go to visit them- it frustrates my sister-in-law to no end.  Us too. 

In fact- he doesn't like going anywhere much either.  He complains the whole time.  Last time he was here for dd's graduation from high school last year, all he did was complain.  They're coming out here in a few weeks to see dd.  She'll be home next week after finishing her Freshman year in college
  We got tickets to this ballet- FIL will probably complain the entire time. 

Drives MIL nuts too.  She can't drive at night anymore- so she's stuck at home at night b/c where they live is a 30 minute drive one way from my sister-in-law.  Yes they need to move.  Every time they've approached the subject, MIL is fine with it at first.  Then she starts finding fault with everything they look it- so they stay in this 100 acre farm
  The day will come that she won't be able to live there anymore.

I celebrate my Mother and Grandmother every day of the year. They are both in Heaven, but they are "Always in My Heart"

This is my first Mother's Day as a mom. We aren't doing anything special though, just going to my in laws like we do every Sunday. I told my husband it was his day to take care of the baby and give me a break since I take care of her all day when he is at work.

I think we are getting take out.  
  DH always asks what I want to do.  We've gone out for dinner before; but Sundays are kind of hard with the kids needing naps after church and the restaurants being so busy.  I just dont know where we are getting take out from!  My Mom lives in town and we all go to the same church; so we will be with her.  

It's my MIL's first mother's day with out her Mom (who lived with her the last 8 years or so) and she is missing her a lot.  We live in another state so we won't see her; but her other kids and grandkids all live in the area so hopefully they will be there.

My mother is coming over here tomorrow and I will cook out on the grill. She really wants a burnt hotdog. :lol3:

In addition to burnt hotdogs we will be having hamburgers, chicken, sausage and a piece of salmon for Aaron. I'll make up a green salad, picked up some pasta salad, and potato chips. I also ordered a fruit tart that I'll pick up in the morning.
