I found poop outside of Pumpkin's litter box

I wrote in the past about Pumpkin's poop habits.....about his hairballs of about a month ago, etc, etc.  Well, this morning I woke up to that smell that told me he used his box.  When I got out of bed I was surprised to find a piece of poop just a few feet away from me on the carpet.  Whenever he poops I make sure to get it out of the box and flushed asap as this is an efficiency apartment.  It wouldn't take long for this place to smell if I didn't keep up with his box.

Because he had a poop with gray in it about a week ago (I assumed it was litter but not I'm not so sure), I checked this piece.  Sure enough, it had some gray in it as if he ate some litter.  I checked his litter box and found several other pieces and none of them had gray in them.  They looked normal.

This one on the floor looked darker than usual but did have brown in it too.

Volume-wise, this was an average poop for him, inc. the piece I found on the floor.

I didn't see any traces of blood.  I tried to inspect Pumpkin's backside (he didn't like that, btw) and didn't see anything out of the ordinary.  When hairballs were an issue last month, I remember one bm where he strained and finally went, but there was one stubborn piece that wouldn't let go.  So, he got out of his box and dragged his fanny across the rug until it came off.  I don't know if that's what happened this time, but I doubt it, given that this poop didn't look flat on one end as if it was pressed down on, nor is hair an issue this time.

So, my questions are as follows:

What's up with the gray color?  If it's not litter, could it be his dry food?  I've been using a combination of Meow Mix regular and Meow Mix Hairball Control.  This seems to be a good combination that doesn't tie up his gut.  I've got another dish with Purina One Urinary Tract Health.

The "hairball" formula is darker in color than the other, and there are pieces that look dark brown/gray.  Maybe that's it and not litter?  I'm trying to find a way to get him to not touch his litter.  When they did bloodwork and xrays last month, they found that pica wasn't an issue and there were no blockages either.

Why did I find the poop outside his box?  How did it get there?

He seems fine otherwise in that he's eating, drinking and he plays with his toys.  However, at night Pumpkin has been acting as though he's had tons of coffee.  Bouncing all over the place and running like crazy, as if he's spooked.  I don't see him doing this during the day.  He acts like he sees something and goes ballistic.  I don't know if he's stressed out.  We're moving this week and I've got most of my things packed.  I want to do the move in two stages as it would be easier on me and him,  Day one most of my stuff will be out of here and set up in our new home.  Day 2 the rest of my stuff, inc. Pumpkin, will go there.

Thoughts, anyone?  I'm stumped,.

I've only had one cat ever take upthe eating litter, and when I took her to the vet she was diagnosed with renal failure and anemia. The litter eating was the only new sign.

Maybe he needs some bloodwork? To help identify or rule out causes?

Maybe he needs some bloodwork? To help identify or rule out causes?
Pumpkin had bloodwork, xrays, etc. when he had the hairball/constipation issue.  I told the vet about this and she didn't seem concerned.  He's not anemic, nor does he have pica.

I forgot to mention that in another post, someone suggested that his gray piece of poop could be due to rapid transit through his colon.  The person I spoke to at the vet's the first time I saw this said he's not having bleeding issues or it would be red or black.  I didn't realize how dark the Meow Mix Hairball Formula is.  Some of the pieces are very dark - brown/gray, so that could be it. 

One of my friends suggested it could be stress, and that wouldn't surprise me.  When I first took him in, Pumpkin threw fits - and many of them - because he wanted to be let out.  Oftentimes he would munch on stray litter that got scattered on the floor if he happened to use his box before asking me to let him out.  Perhaps it was his way of trying to get what he wanted?   I think he knows I don't want him to do this.

His appetite is good, and he drinks well and pees too.  Active as usual.  I'm just stumped as to why that piece ended up on the floor near my bed.  The rest was in the box. I hope I won't see any more gray, but I suppose that could be due to his dry food too (hairball formula).

Is there an alternative litter someone could recommend?  I'm using Tidy Cat non-clumping.  I tried "Yesterday's news" but it expands when wet.  That could be a problem if he were to try and eat it.  What about the corn/wheat litter?

The vet confirmed he does not have pica.  I brought this up about a month ago when I took him in for constipation and hairballs.  They ran xrays, bloodwork, etc.  She said he isn't anemic either.

I hope this won't continue to be an issue.  Pumpkin seems fine otherwise.  Like I said previously, he eats, drinks, pees, etc.  As far as poop is concerned, I saw only that one from early this morning, with one of the pieces ending up on my carpet.  I gave him some more Laxatone a short time ago and will shop for another kind of litter tomorrow.
