So.....Easter Dinner

My brother and SIL, sister and BIL, and Rick's parents are coming for Easter dinner next weekend. I worked on my menu last night and got it all straightened-out. Just need to grab a few groceries. There are some new recipes that I've been wanting to try, so this is as good a time as any, I guess.

Cook's County Cider-Baked Ham OR Bourbon Glazed Baked Ham (not sure if I can find apple cider at this of the year. If not, I'll go with the bourbon. I really want to try the apple cider recipe, though, as it's from Cook's Country and it sounds wonderful. The ham is brined in the apple cider-spice mixture for up to 12 hours before being slathered with a mixture of brown sugar and pepper, then brushed with more of the apple cider mixture while it bakes. I can start it Saturday night and finish it on Sunday.)

Mustard Potatoes au Gratin (I though the mustard taste with the potatoes would go well with the ham. And it's make-ahead)

Sweet Potato and Apple Scallop

Baked Corn (my sister is bringing)

Asparagus with Leeks (as long as my MIL is coming to dinner, we will have this on the table)

Pickled Eggs (it's not Easter without pickled eggs!)

Freezer Cabbage (this is like a pickled-type coleslaw....I made some back around the end of December and threw it in the freezer. All I need do is get it out and put it in the fridge)

Sesame Onion Bread with Onion Butter (this is a gorgeous braided yeast bread with a cream cheese-onion butter. I've made it before and it's delicious; I thought it would go well with the ham, but it also goes great with spaghetti or even soup.)

Chocolate Swirl Cake (I bought a cookbook just for this recipe; it better be good.)

Ladyfinger Lemon Dessert (a lighter dessert)

Sugared Pecans (pretty much for my MIL, too; she loves them)

Cookies (I'm thinking of some rolled sugar cookies in bunny and egg shapes that I can make and decorate on Saturday)

Iced Tea and Coffee

Pineapple Wine and whatever wines my brother and SIL will bring

I can do most of this on Saturday; the eggs can be made on Friday night. So it won't be a lot of last-minute work....I hate rushing around at the last minute. The most hassle is the asparagus with leeks as that is pretty much done at the last minute. But that's it.

My sister's coming over early to help out. Rick's coming home to change his clothes after church, then he'll go back up to bring his parents to the house. Dinner is at 2:00, with leftovers around 6:30.

Actually, Easter Sunday is my birthday and I'm using it as a good time to catch up with old friends I haven't seen in ages.  I can only fit eight people and need to make something that suits all tastes.  Best to go veggie, or at the most, fish.  And it's likely to be hot.  And I'm a lousy cook. 

 
     This is me grovelling for suggestions...

Oh that all sounds delicious! :yummy: We don't do a big Easter dinner around here. My mother will probably come by and sometimes my brother stops by if he has his youngest. Other years I've made lasagna, pizza or have had a cookout.

Oh do tell.... I'm looking for a yummy cake recipe for my mother's birthday.

:lol3::lol3::lol3: Veggie and fish are not my specialty. I have a recipe for grilled shrimp which I have served as an appetizer before. Maybe a veggie lasagna?

Oh my that's an impressive menu! It all sounds delish, but I'd love to try that bread especially.

Mani- how about a cold soup like gazpacho or vichyssoise? With a salad, and perhaps grilled shrimp. Most you can make ahead.

We're probably having my SIL over and if so, I'll attempt a slow cooked prime rib. It will be an experiment as I've never done it before, but I'll never try new things without an occasion to motivate me.

That's an impressive menu. Do you have the recipe for the asparagus and leeks?

Mani, I have to agree here. Gazpacho, grilled shrimp and a salad sounds easy, delicious, and nice for hot weather.

Sorry for hijacking your post, Winchester! But thank you for the suggestions everyone. 

Gazpacho is a great idea.. I can work with different salads.  I'm not sure shrimp will work with the people I have.

Whew!  Since we spend Easter Sunday at church first (like every other Sunday) we don't go all out as much.  My Mom is doing a ham and that's all I know so far! 


My step-sis and her family will be coming to town.  I'm not sure about my other step-siblings.  I'm going to look for a side dish I can pre-cook and then heat up again or something along those lines.  My Mom's house is between ours and our church so I don't want to have to drive all over creation that day.

I agree with the above suggestions, too. What a great dinner that will be! With something cold and fruity for dessert! Maybe an ice cream pie? (Make it ahead and just throw it in the freezer until you're ready to serve.)

Or if you want something that's make ahead and just thrown into a crock pot or slow cooker, I can suggest the crock pot pulled pork in the Recipe Exchange. Throw it all in to the crock pot and then all you need are the rolls to go with. And your salad. Love the gazpacho idea.

I wish some of the stores around here would cook a dinner and you buy it from them. They do ham or turkey at Christmas, 2 sides, potatoes, pie, rolls, tea. Sunday would be hard for me to have a dinner prepared myself as we do an Easter Sunrise Service at 7, breakfast following,, Sunday School and then Church Service. I am worn out by then.

Sunday would be hard for me to have a dinner prepared myself as we do an Easter Sunrise Service at 7, breakfast following,, Sunday School and then Church Service. I am worn out by then.
I don't know where you live or if you have any Shari's restaurants close by. They have a take away ham dinner for 6, ham and four sides, rolls and a whole pie. Maybe Shari's is just a NW thing....kind of like Denny's elsewhere.

My grandma always has the grocery store cater family dinners. I won't say the food is great, but it's OK. Call around to different stores and restaurants--I'm sure you can find one that caters.

Have you checked out any local restaurants to see what they're having for Easter dinner? That way, you wouldn't have to cook. Or you could have your dinner on Saturday instead. Our kids are doing that as they're going to be busy at church, so they're doing their dinner on Saturday.
