Is anyone eating a gluten free diet

I've given this some thought with having Ulcerative Colitis, but where to begin?  And the cost seems so prohibative.

I can only say it has been well worth it for me. I feel better, have dropped a pants size, and can wear rings on my right ring finger that have been too tight for years.

Question here for someone who understands gluten free diet. Yesterday we were invited to lunch with friends at their house. She cooked dried butter beans with chunks of ham, cheese biscuits, pound cake served ice cream. Obviously I didn't eat the cake or biscuits. I took some of my own gluten free cornbread and ate that. I ate vanilla ice cream with a butter/browns sugar sauce over it. I drank a can of A/W Root Beer, which is gluten free. Before long, I was having such a problem with allergy related symptoms and had to take some medicine when I got in the car to leave. I am trying to figure what in the world I ate that triggered that response. The only thing I can think of is the ham. Does anyone know if all ham is gluten free or just certain ones.

Oh, now I am wondering about the ice cream too that I ate. I didn't see the box she dipped mine from. I guess maybe I could ask her about the ice cream and the ham. I also wanted to post a tip here for anyone who is eating gluten free. I had a brain storm earlier this week. I took all the gluten free products I have in my cabinet and called the 800 number on the package. I asked them for recipes and coupons. They all agreed to mail me coupons, recipes and catalogues. I received the first yesterday from Bob's Red Mill. And if these folks would do it, probably any company would do this if you just take the time to call and ask for their coupons. Give it a try.:nod:

I want to ask if any of our members who eat gluten free have a recipe for fruitcake. I always have my eggnog and fruitcake to help me get into the holiday moods.

I've not made this recipe, but it looks delicious and is well rated - Gluten-Free Fruit Cake Au Naturel
It looks like it would be simple enough to cook. I was trying to find a tried and true recipe that someone can vouch is good. Gluten free cooking is not inexpensive and I don't want to waste my money. :lol3:

I've read one of her books and tried a few of her recipes, and they're good. She has her own flour blends which she uses in her recipes. I've tried this Orange Cranberry bread a couple of times, and it's yummy. I've always thought it would make a good Christmas fruitcake recipe, just add more fruit and a splash or two of Contreau perhaps?



Sweet GF Flour Blend


4 ½ cups white rice flour
1 ½ cups sweet (glutinous) rice flour
2 cups potato starch (not flour)
1 cup tapioca starch
4 tsp xanthan gum

Mix all the ingredients together well with a whisk. Can halve, double or triple recipe.


Orange Cranberry Bread


2 cups sweetGF blend
1 cup sugar
1 ½ tsp baking powder
½ tsp baking soda
1 tsp salt
1 ½ cups cranberries, chopped
2 Tbsp fine orange zest
¾ cup orange juice
2 Tbsp grapeseed oil
1 egg, beaten

Glaze

1 cup icing sugar
1 tsp orange zest
1-2 Tbsp orange juice

Preheat oven to 3500F and lightly spray a 9x5” loaf pan.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
Take about ½ cup of the mixture and put in a small mixing bowl. Add the cranberries and orange zest and mix well. Set aside.
Stir the orange juice, oil, and egg into the flour mixture and mix until well blended. Add the cranberry mixture and stir well.
Pour the batter into the pan. Rap the pan three times to settle the batter.
Bake for 50-60 minutes, until done. Let cool for 15 minutes in the pan, and then transfer to a wire rack to cool.
Mix the glaze ingredients together, adding more or less juice as necessary. Pour generously over the bread, letting it dribble down the sides.

Processed meats like ham can contain "stealth" wheat... All cold-cuts, bacon, ham you must check the label or buy stuff which is clearly marked GF. Ice cream is another one, must check label.
