Make ahead meals (aka TV Dinners)

If you have posted here a while, you will remember that I'm the Queen of make ahead frozen meals!  Well, I'm at it again!

It's starting to get too hot to cook, plus I'm usually so bagged when I get home the last thing I want to do is cook, so my diabetic eating hasn't been all that stellar for some weeks.

This weekend I actually felt up to cooking and have been making frozen individual serving dinners.  Yesterday I made beef stew (4 servings); and beef stirfry with rice (4 servings). Today I'm making lemon chicken with rice (3 servings); and hamburger patties with mashed potatoes and green beans (6 servings); and 3 frozen cooked hamburger patties.

Tomorrow I'm going to make shrimp creole and rice (4 servings).

Safeway had a good sale on strawberries so I bought a few containers and I'm also going to freeze them tonight. Plus I bought a large bunch of bananas which I am going to freeze. I cut each banana into chunks and freeze each in a small freezer bag. I use them to make smoothies.

Anyone else into making single serving frozen dinners?

Me!! :wavey: I'm not diabetic, but I am a college student, so I make lots of cheap crock-pot meals and freeze the leftovers in individual bags. :D

I do, too. Usually chili, lasagna, and enchiladas. My cooking skills are not extensive :lol3:. I also freeze peanut butter sandwiches so when I'm in too much of a hurry to even slap some peanut butter on bread I still have something to grab.

Funny you should mention that!  I tend to be slack making my breakfasts and lunches. Even though it really doesn't take that long the evening before, I often develop a mental block against it. This results in my spending $15.00 at work for 2 meals!

When I do take lunch it's typically a deli meat sandwich such as roast turkey or roast beef.   This evening I started to wonder how a premade meat sandwich would hold up to freezing and then thawing.

I didn't try it, but I figured while I was making one sandwich for tomorrow, I may as well make 2 more for the next 2 days! I wrapped them well in plastic wrap and put them in the fridge.
