Around here we get what is called summer sausages, good cold with crackers and honey mustard, and Polish sausage, great with sourkraut!
I think (not sure) they're both pork sausages.

Never had apple or tomato sausage, but sausage made from all kinds of meat is really popular in Texas. My favorite is dried venison (deer meat) sausage. My hubby likes sausage a lot more than I do...I'm not much of a carnivore, just eat meat occasionally.

There's also a Cajun type of sausage called boudin that is delicious.

HA! I'm the daughter of a butcher who made all of his sausages in the shop where he worked. Traditional sausages made in America are pork based, but there are now a lot of healthier sausages made with ground turkey. My favorites are Polish (of course), Italian, Cajun, Chorizo, and smoked. The differences between them are simply the spices added to the ground up meat. My grandmother (from Poland) used to make blood sausage - don't ask me what's in it because we were afraid to watch her make them!

Great thing about the ethnic melting pot in the U.S. - most types of food are readily available for you to try!

P.S. My mother's side of the family came from Derbyshire - is this anywhere close to you Kev?

Derbyshire is just south of yorkshire - nice neck of the woods - nothing startling as far as scenery is concerned - has the M1 motorway running through it and a massive Theme Park- Alton towers - have a look on the www for it - its big and damned expensive!!!!!

Movin' on up!
I buy smoked beef sausage and simmer it in beer. Served with Dijon or spicy brown mustard, on a French roll - yum!

Mild Italian sausage goes into my spaghetti sauce and meatloaf. (I prefer hot & spicy but Bill gets a nasty stomach from it). Weekend breakfasts almost always include hot pork sausage.

Black Angus used to have a sandwich of Italian sausage, sauteed in Jack Daniel's and fennel, on their lunch menu. I miss that.

Oh yeah...Italian sausages (and when I have time, I make my own and my own specialty flavored ones - like sausages stuffed with a mix of fresh spinach, scallions and basil, parmesan cheese, and fresh ground pork as the meat), gourmet sausages - we have a local chain. Larry's, that makes incredible sausages with no "junk", no preservatives, fillers, just what it says it is..like pork, walnut & cranberry, or chicken basil & sundried tomato etc.

We also love bockwurst, bratwurst, an american brand that does silly stuff like cheddar stuffed

Good thing I'm full from dinner..this topic could make me drool!

Lotsa sausage! Just about any kind you want, I think. The standard supermarket fare tends to be pork based, with fairly tame seasoning, but go to the ethnic markets or the neighbourhood butcher or the specialty butcher and the world is your oyster. Italian, Polish, Mexican...Pork, Beef, Chicken, Turkey, Lamb, with seasonings to make your head spin. Mega Yum! Great mid-week supper, especially wonderful on the BBQ when the weather's right.
