Last night was chicken pot pies (don't get excited, they were frozen Swanson and were on sale 5 for $5 
 ), but tonight I'm making spaghetti. Since I make enough sauce for an army it will probably be dinner (and lunch) for Monday, Tuesday and probably Wednesday unless we're "spaghettied out" by then and, if so, the rest goes into the freezer. Is it just me or does spaghetti sauce taste completely different on macaroni?

I missed a couple days here. Sigh.

Last night I had parmesan dill toasted breadcrumb flounder with garlic and herb mashed potatoes and asparagus. Our local grocery stores have wonderful prepared foods and this flounder is one of my favorites. Unfortunately, however, they change their menus often and I haven't been able to find this fish for a quite a while. So, yesterday, when I was at the grocery store, I snapped up a couple of pieces. It was as delicious as I remembered! The mashed potatoes and asparagus were sides I picked up as well. No cooking for me last night, but it was a healthy dinner all the same.

I have to decide what to make for dinner tonight. My roommate made some sort of chicken using the Philadelphia cooking cream, onions, peppers, and brown rice. It smelled good last night, but I don't know if that's what I want later. I'm in the mood to make stuffed peppers or stuffed portobello mushrooms, but I have the ingredients for neither. But, there's time to figure everything out. I think I'll come up with an idea for lunch first. Or, perhaps, the breakfast I haven't eaten yet...

I do love this thread. I hope it sticks around for a while.

White bean chicken chili, except it became white and pink bean chicken chili because I didn't have enough cans of white beans. :lol3: Also some rye bread from Panera.

Tonight is leek and potato soup.

I would like to know what's in loaf sausage (like meatloaf?) and RuthyB's sage & onion stuffing balls!!

I will be making a knock off soup from olive garden-their zuppa toscano.  I created my recipe from many on the internet.  Italian sausage/potatoes/onion and kale in a cream broth.  We are trying out some new bread recipes at work and I have a rosemary fougasse bread.  I'll have to create something else for lunches this week so I will probably make cheeseburger chowder! An area grocery is having a special on beef roast so I will pick one up for making beef stew later this week.
Wow,everyones food sonds gorgeous.The sage and onion stuffing balls is just a sage and onion packet stuffing mix,you just add boiling water and leave it then when its cooled I roll them into balls and cook.Special occasions I make my own stuffing out of sausage meat which is just yummy.x

I had what I call slop supper. Macaroni, hamburger, tomatos, tomato sauce and paste all mixed together in a fry pan. That will be for tomorrow night as well.
My mother called that goulash.  Not what the Hungarians would call goulash, I'm pretty sure.

Since I worked late tonight, I wound up picking up Chipotle on the way home. Plus, I had a somewhat stressful day. And, Chipotle for me is a comfort-type food.
You know who owns Chipotle's?  Or, more accurately, who owned it while it was doing most of its expansion?  McDonalds!

We don't have one handy around here.  Funny, in Texas, huh?

We're having white bean chicken chili tonight.....just got it all mixed into the crock pot. Since I wanted to do the chicken chili today, tomorrow night will be our Meatless Monday (or Tuesday, as the case may be).

I took some boneless chicken breast out and will cut them while still semi frozen to dip in an egg wash, then dry buttermilk dressing and roll in panko.  I the winter farmer's market I bought cornmeal based basil pasta and better use up that lettuce in the refrig before it goes off!

Hehe...that's what I was thinking too Karen!  I started making my list for the week yesterday.  I'm supposed to be going shopping this morning.

So far the only thing sounding fabulous is baked ziti.  Not sure what we will eat for the rest of the week after that!

OMG! baked ziti does sound fabulous. :drool: Not on the diet though. :hmm:

I think I am going to make some Winter Vegetable Soup today for lunches, etc and Hungarian Paprika chicken for tonight. I also just found a crockpot recipe for Spanish chicken that I think I will try later in the week.

MY BIL the mighty hunter, gave me some frozen pheasant so I'm going to try my hand at that. Thought I would brown it then braise it in a wine sauce with carrots and potatoes. It was rather off-putting when I realized the feet were still attached. Pretty creepy! lol!

I had homemade (not by me; by a coworker) Italian wedding soup and grilled cheese for dinner. It's certainly nothing fancy, but it was what I was in the mood for this evening.

I'm off tomorrow and am going to spend part of my day cooking for the week. My work schedule can be somewhat harsh and I find myself eating out more often than I'd like. So, I'm hoping to be inspired tomorrow -- I need meals to get me through until Monday as I only have one other day off this week (Wednesday). I know I'm definitely going to be making fish for dinner tomorrow evening as I have all of the ingredients for panko breaded flounder with a lemon herb seasoning. And, I think I'll add baked potatoes and steamed broccoli to round out the meal. As for what will be on the menu for the rest of the week? Well, I suppose I have some planning to do!

Not much of a supper but I had a can of soup for supper. I'm sick as a dog today so I really didn't feel like put any effort into dinner. Plus I was opening the warmth of the soup and the spiciness of the soup would open up my nose so I could breath more. (it was Santa Fe chicken soup, I think the progressive brand)

Well this is a look into the future to Wednesday nights dinner. I'm going to make a pork loin roast in my crock pot.   Its going to have low-sodium soy sauce, thyme, rosemary, a little bit of Worcestershire and some red wine and a package of dry onion soup. I'm also going to make some mash potatoes and then I'll add some flour or corn starch to the roast juice to make gravy.  I've never made a pork loin roast this fancy (usually I just rub salt and pepper on it and stick it in the slow cooker lol)   I haven't decided what type of red wine to use but I guess I can always ask the person at the liquor store what they think.     If anyone has any red wine suggestions that's good but not too expensive let me know lol.   My knowledge of wine is very lacking even if wine is my preferred alcoholic beverage lol.   The only wine I've ever bought on my own was a strawberry dessert wine that I got while I was in Italy. The only reason I had enough courage to buy it was that I got to try it first lol.

Tonight is Meatless Tuesday (since we did the chicken chili on Monday) and we're doing a breakfast frittata with lots of broccoli, green peppers, red peppers, O'brien potatoes and egg substutute with reduced-fat Cheddar to sprinkle over. I have a meeting tonight right after work and won't get home until around 6:00 or so.

@GailC Loaf sausage is bratwurst filling baked in a loaf pan so it forms a crust. Just about any sausage recipe will do. Here's some: Fleischkäse recipe Leberkäse I get the butcher to grind the meat.
Tonight we're having (red) lentil stew.

Tonight I made crockpot pork & bean stew. Pretty yummy with a touch of heat from some ancho pepper, and I threw in a diced apple for something different. Oh, and I squirted on some amber agave syrup while it was cooking but I'm not detecting any of that flavour.

Shrimp kabobs is on our menu for tonight. I have some leftover pieces of tropical fruit from when I made curried pork, so I'm going to use that instead of pineapple chunks. Chunks of green pepper, small button mushrooms, and cherry tomatoes. Rick will peel the shrimp when he gets home from work and start the marinade as the shrimp has to marinate for 2-3 hours. Then, when I get home, I'll finish dinner. We have a George Foreman party grill....it's circular....so I use that when I went to grill indoors. And tonight it's way too windy outside to even try to start the gas grill.
