Not much.  I've been sick since New Year's--first, the mild food poisoning; now, a cold that has turned into a sinus infection on Sunday. I've had all of THAT since last Wednesday. I've lost most of my appetite since I've been sick; heck, I even passed up dessert   this week! (Call 911!!!
).  I did have part of a Lean Cuisine personal pizza; I wasn't really hungry for dinner, but forced myself to each about 3/4 of it.


Looking forward to chowing down sometime next week...sigh.

I made a roast but since DH wasn't hungry, I sliced some up and made myself an open faced sandwich with gravy. It was really tasty.

Since I worked late tonight, I wound up picking up Chipotle on the way home. Plus, I had a somewhat stressful day. And, Chipotle for me is a comfort-type food.

For those of you who may not know, Chipotle is a fast food-type restaurant. But, to me, it's not quite fast food as the ingredients are fresh and are locally grown or organic in many cases. I had a burrito with brown rice, black beans, fajita vegetables, chicken, corn salsa, sour cream, cheese, and lettuce. I also had some tortilla chips and medium salsa. Yum!

I just wish I wasn't so full now... Sigh...

I haven't had Chipotle for a good bit, I know whats for lunch tomorrow!

Wish we had a Chipotle around here!

Tonight we'll be having beef strips with sauteed mushrooms and pepper slices. Green beans with almonds.

Fixing pork chops and roasted garlic & herb pierogies, with sauteed onions and sour cream. Not sure about the veggie....may just go with a salad. I love this thread also.

I made an enchilada casserole with zucchini, corn, black beans, tomatoes, and onion with Spanish rice on the side. My boyfriend turned vegan recently so I put cheese on my half, although now I've been trying to limit my dairy intake as well.

7 layer bean dip with fritos. We had mcdonalds for lunch so weren't too into a dinner type meal.

We did got out last night and had mussels and I had a balsamic scallop salad. :)

I have some chicken sausage and homemade spaghetti sauce thawing for tonight. :)

We went to the outlets yesterday, so we each had a slice of pizza for lunch. I made nothing for dinner as there was some leftover soup in the fridge. We had that with an English muffin for a quick supper.

Tomorrow is my mother's birthday and we're all going home today for dinner after Rick and his mom get home from church. My mom has requested liver and onions, so that's what I'm making. Since Rick and my BIL don't eat liver, Mom will throw a small beef roast into the oven. I'm making scalloped potatoes to go with that. I'm taking up a small container of Freezer Cabbage from our freezer and some canned Bread and Butter Pickles. My sister is taking care of the birthday cake.

Have been eating out way..... too much! Can control the calories, but not the sodium, and BAD for my wallet too uhg!

For lunch I had a chicken fajita wrap, dinner I went to Jack in the box - but WAIT - I made that healthy :lol3::lol3::lol3: Got their chicken fajita pita - it's about 300cal :nod:...... and Today - God knows - I have chicken Teriyaki in the fridge..... then I will really need to shop for some fresh meat and vegetables :nod: Gotta get going on the cooking here!

Sunday roast today....Roast lamb,roast potatoes (roasted in goose fat),sage and onion stuffing balls,carrots,cheesy mashed potato,3 different types of cabbage and gravy made from the lamb juices oh and I can't forget yorkshire puddings.x

I would like to know what's in loaf sausage (like meatloaf?) and RuthyB's sage & onion stuffing balls!!

I will be making a knock off soup from olive garden-their zuppa toscano.  I created my recipe from many on the internet.  Italian sausage/potatoes/onion and kale in a cream broth.  We are trying out some new bread recipes at work and I have a rosemary fougasse bread.  I'll have to create something else for lunches this week so I will probably make cheeseburger chowder! An area grocery is having a special on beef roast so I will pick one up for making beef stew later this week.
