I'm the family's baker now.
Rick needs his Snickerdoodles. Our son needs his Chocolate Crinkles. The grandchildren want their cut-out cookies. So I bake a large assortment of many different kinds of cookies and we share with everybody. Rick and I take cookies into work. I have a list about ten people around the US that we mail cookies to and they always appreciate them.
Today (Sunday) I am baking my basic drop or molded cookies:
Snickerdoodles
Chocolate Crinkles
Pecan Sandies
Chocolate Chip Cookies (a recipe from King Arthur that calls for vinegar....these cookies are amazing)
Peanut Butter Chocolate Chunkers
Sesame Coins
Raisin Puffs
Lemon Sponge Cake Cookies
Later on I'll make:
Thumbprint Cookies
Candy Cane Cookies
Snow Flake Cookies (put two together with a bit of chocolate frosting)
Spritz Cookies (with the cookie press...Rick is better with the cookie press than me, so he'll help)
Macaroon Kiss Cookies (I like them better with a maraschino cherry on each cookie instead of the Hershey's kiss; Rick hates them because they're rolled in coconut)
Christmas Cookie cut-outs (from Martha Stewart)
A new recipe that I want to try for Maple Cut-out Cookies (just found the recipe and it's calling to me)
I also make miniature Lemon Cakes (an Ina Garten recipe) that I add to our cookie parcels. Those little Lemon cakes are delicious. And I always make several batches of Almond Brittle, too. Several years ago, I made my first batch of Alton Brown's White Trash and people just raved about it. That goes into our mailing parcels now, too. Homemade Marshmallows (another of Ina's recipes) is wonderful in hot chocolate.....yum!
I love to bake. Usually during December, I'll take a night or two during the weeks and bake cookies. And one of my weekend days every weekend in December will be spent in the kitchen. I'll turn the stereo on and sing along to Aerosmith or Deep Purple (my old rock standbyes) while I'm baking. The night goes by so fast. Rick calls me his Rockin' Baker because I'll belt out along to the songs.
Our Christmas Day dessert is usually some kind of cheesecake because that's what everybody likes. I don't eat cheeescake, so I'll nibble from the cookie tray. Not a biggie.
