On Sunday morning, Rick and I finished making applesauce. We ended up with not quite 27 quarts of sauce.
Tuesday night, I did 22 apple dumplings (12 for the freezer, 4 for Rick, 2 for me, and 4 for my sister and BIL).
Last night, I made three nice apple pies, one with a top crust and two with a crumb crust. Those are in the freezer.
I found a recipe for maple pecan pie, and Rick dearly loves pecan pie, so while I was in "pie mode" I made one large pie and two small ones. It's really good using maple syrup instead of corn syrup or table syrup. It has a richer flavor and Rick thinks he likes that better than the chocolate pecan pie that I usually make. We're working on the large maple pecan pie (I brought half of it to work) and I'm giving one small one to my in-laws and taking the other small pie to my mom's tonight when I visit.
We always have a ton of pecans in the freezer and I have two quarts of Grade B (B is better for baking than A) maple syrup in the pantry, so it all worked out.
It was a nice baking time.
