Cornbread stuffing?

Now that Thanksgiving is quickly approaching, I'm getting my recipes out and will start making up my menu soon.  I normally do a few different stuffings and would like to try a cornbread stuffing this year.   Does anyone have a recipe they would recommend?   I found a Rachael Ray one that looks interesting.  It would have to be one that could be made ahead and reheated and I would not stuff the turkey with it.  

Oh,  should also say no fruit, etc in it.  I wouldn't mind that, but my family would spit it out.  LOL 

I'll also be making my French Meat Dressing and the Portuguese Stuffing like I do every year.

Here's one of our favorite stuffing recipes. I like it because I can use my large crock pot. First, I'll give the recipe, then I'll tell you how I make it.....you don't have to add the apples, since your family doesn't like fruit.

Crockpot Stuffing

1 c. butter or margarine
2 c. chopped onion
2 c. chopped celery
¼ c. parsley, minced
12-13 c. slightly dry bread cubes
1 tsp. poultry seasoning
1½ tsp. sage
1 tsp. dried thyme
½ tsp. each salt and pepper
½ tsp. marjoram
2-2½ c. chicken or turkey broth
2 eggs, beaten

Melt butter in skillet and sauté onion, celery, and parsley. Pour over bread cubes in a very large mixing bowl. Add all seasonings and toss well. Pour in enough broth to moisten; add beaten eggs and mix well. Grease crock pot with butter. Pack lightly into crock pot. Cover; cook on high 45 minutes; then reduce to low 4 to 8 hours. Makes 6 servings.

RECIPE NOTE:Two 7-ounce packages seasoned stuffing mix may be substituted for bread cubes. Use 3 to 3½ cups chicken broth; omit herbs and salt.

What I do: I add two Granny Smith apples (peeled and chopped) and a combination of white, whole wheat, and cornbread cubes (you can use all cornbread, if you like) instead of just one kind of bread. I use a bit more of the herbs than what the recipe specifies. I do not use all of the broth. I take the lid off the crock pot for the last 45 minutes and only cook the stuffing for about 4 hours.

For those who like sausage with their stuffing, you can brown 1 to 1-1/2 pounds of bulk sausage and then add the onions, celery, parsley, etc to the sausage in the saute pan. I like to make my own cornbread for this stuffing....I just make it the night before, bake it, then let it cool and cube it.

That sounds yummy.  I never thought of making stuffing in the crockpot.

I need to get my mom's recipe for dressing for you. I'll call her tomorrow and ask.

It involves not only chicken broth, but a whole chicken, deboned and cut up into the dressing. Needless to say, it is TO DIE FOR!!!

OH Pam!!! That crockpot stuffing is right up my alley! I love using the crockpot to cook. I will give this recipe a try. Sounds heavenly yummy :yummy::9:

Speakhandsforme, I have had cornbread stuffing with a chicken mixed in and it is really delicious. Cant wait for your recipe.
