I baked 3 more neck pumpkins yesterday morning (for a total of 5). That gave us four quarts of pumpkin total for the freezer, plus the roasted seeds, plus what I used for the pumpkin bars and the pumpkin yeast crescrent rolls for the freezer. I made the rolls yesterday and we had a few with our leftover vegetable soup for a quick dinner last night.

I like baking with pumpkin. Here are the rolls after I finished shaping them. I am not the world's best baker by any stretch, but they're not too bad. (Pardon the fingerprints on my stove...I'm not a neat baker either.)

So....last night we went to Lowe's for a junction box to install the new light over the sink. And while we're down that way, I mentioned that I needed some Sip for the cats and I might as well get the stuff I need to make Mom's Chow Chow for her today. She asked me for it over a month ago, but I simply haven't had time to make it for her.

And what do we find at Giant? Pumpkin! Lots and lots of canned pumpkin. I give up. I bought three small cans, just to be on the safe side. We do use a lot of pumpkin in all kinds of dishes, so it will get used. But geez....after I baked pumpkin...now we can find it. That figures.

I also made some Freezer Cabbage yesterday. It's like Pickled Cabbage (which we really like), but you can put it in the freezer. Got five quarts of cabbage and I'll give some of that to Mom.

So this morning, I'm going to work on making that Chow Chow for her. Then I'm putting the canners away until next year.

Aww, all that time and effort baking the pumpkin, and then you find cans right away. Yep, it figures.
But, like you said, you have lots on hand now. Was it your usual store? Or was it a different one that you hadn't looked in before? (sorry if you mentioned it in the pumpkin at stores thread, I didn't read through it all) The rolls look good.. and I am definitely trying pumpkin cookies or bars. I will get canned pumpkin though, there's a bazillion grocery stores around so someone will have it. Actually I did see cans at Trader Joe's on Friday, so it shouldn't be a problem.

Pam I have a question for you or anyone else who might know. I don't do loads of cooking so my spices such as garlic powder etc. lasts a long time. I usually put a sticker on the bottle telling me when I bought it. My garlic powder was first used in 2009 but it still smells like garlic and tastes fine too. How long do you think it stays fresh, thanks.

I made a super easy pumpkin bar recipe today. My daughter and I can't stay out of them!

Pumpkin Bars

1 (18 1/4 or 18 1/2 oz.) pkg. yellow
cake mix
1/4 c. vegetable oil
4 eggs
1/2 c. nuts, chopped
1 (16 oz.) can solid pack
pumpkin
1 (14 oz.) can sweetened
condensed milk
1 tsp. almond extract
1/2 tsp. ground cinnamon
1/2 tsp. salt

Preheat oven to 350 degrees. Reserve 1/2 cup dry cake mix. In large bowl, combine remaining cake mix, oil and 1 egg; beat until crumbly. Stir in nuts. Press firmly on bottom of 13 x 9 inch baking pan. In same bowl, combine remaining ingredients; mix well. Pour over prepared crust. Bake 50 minutes or until set, cool. Cut into bars. Garnish with nuts or as desired.

Technically you should replace your spices after one year. I don't, though, not all the time. If it still smells ok and if it tastes ok, I'd continue to use it.

That pumpkin bar recipe looks pretty good!

It was the exact same store; that's why I was a little put out. But at least I have enough to see me through for awhile.

Yum!! Those rolls are making me hungry!!

Sometimes ya just can't win! My Mom has been stocking up "just in case." I still just want the seeds!! Maybe I can find a friend around here who carves pumpkins and get some from them!
