Turkey burgers and steamed veggies. I am on a health kick, and my family wants to know why they have to suffer with me.

Turkey burgers are DA BOMB!

Tonight is Meatless Monday, so we're having stuffed acorn squash. I am making a vegetarian vegetable soup tonight, but that's for tomorrow night.

I am making stir fry tonight. I bought beef, broccoli, carrots, onions, red pepper, orange pepper and teriyaki sauce to put in it.

I got a sub from a local shop that makes the best subs around. I was going to make a pineapple chicken stirfry but got lazy.

I made Irish Stew and garlic bread last night; it turned out great! It was kind of a joke for my husband since he's 1/2 Irish and 1/2 Italian, lol.

Tonight is veggie night with a spinach salad and "conchiglie tutto giardino" from The Vegetarian Epicure Book 2. It's a shell pasta dish "the whole garden" with tons of different vegetables in a cream sauce, old family favorite.

This morning I threw a combination of chunked potatoes and carrots, sliced onions, chopped red peppers, and frozen peas into the crockpot. Topped it with half an envelope of onion soup mix and a bit of chicken stock. Put halved chicken breasts on top of that, then the remaining onion soup mix and stock. And then poured about 1/3 cup of white wine over that. When I get home tonight, I'll thicken the sauce a little.

Last night I threw together a bit of cabbage, carrots, fresh broccoli and fresh cauliflower and made a bit of coleslaw dressing and mixed it all together.

Rick is bowling early tonight, so we'll need an early dinner.
