What can I make with Kale?

Someone gave me several HUGE bushel of Kale. I never made anything with it before.

So far, I tried Kale Chips (not too shabby, but eh). Looking for healthy ideas.

All I could find is baked Kale chips. It's very bitter, but so good for you, I'd eat it if it was given to me.

Try the chips with different sauces? I think everything tastes pretty good with garlic salt....

My favorite recipe is to saute some onions, spicy sausage, and cannelini beans then add the kale until it is wilted.

I love it sauteed with garlic and mixed veggies with couc cous or quinoa and chicken or tuna

Put a leaf of kale in a smoothie. It'll turn green, but you can get all the goodness without tasting it!

This soup also freezes very well. I had some frozen and I thawed it when I wasn't feeling well. Very comforting when you are under the weather.
I'll second the soup idea. Especially Lizzie's Portuguese Kale Soup. Lizzie, if you're around, would you post your recipe....so delicious!

Add your kale to bean soup, add it to virtually any pasta with sun-dried tomatoes and lots of basil and oregano and maybe some cannellini beans, too. Roast it with some olive oil and some herbs. Steam it and have it with your pork or chicken. I bet you could add it to a good stir-fry! Wonder if you could add it to some coleslaw?

I'd love to take some off your hands!

I agree! Kale is excellent in a good, hearty soup! (In fact, all this talk of soup makes me want to make some!)

I also saute it with all sorts of veggies to go over pasta. Love kale.

thanks for the ideas and links! I am actually getting a crock pot this afternoon to try some soup this weekend. Kale would be a nice addition

Portugese Kale Soup

saute in a little olive oil 2 chopped onions
add and saute 2 chopped ribs of celery
then add 2-3 chopped carrots,1 package sliced polish sausage,1 tube of chorizo.Your veggies and polish sausage will get a little color,get soft and don't panic at the red from the chorizo...it's paprika!
Add 2-3 boxes of chicken broth,a healthy teaspoon of chopped garlic,a teaspoon of leaf thyme,a bay leaf or 2.When this comes to a simmer,take the leaves off the ribs of a bunch of kale(I like a lot,you may not)and run your knife thru them a couple of times and toss in the pot.I always add tomatoes of some sort...canned,whole,fresh,diced...your choice.I simmer this for at least an hour.
This is one of those wonderful recipes that you can add or delete whatever you want.I have been known to add a can of rinsed white beans....some people may not like so much garlic or thyme.Try less and taste as you go.A friend of mine used kidney beans...another used canned pintos.If you don't like polish sausage,omit or use what you like.It does not taste the same though if you don't use the chorizo,I have found.It freezes very well.I hope you all enjoy....this is a real family favorite at my house!

It is lovely just steamed with a bit of salt (or not). My mom used to get it for cheap because nobody knew what it was at the farmer's market until the people who sold it were going home and still had half left. It's a bit bitter, but I never minded that.

Kale will freeze quite nicely I have found.If you take the leaves off the ribs and blanch in boiling salted water for a minute,then in ice water,drain,chop if you like and put in a freezer bag...I usually measure out 2 cups per bag and squeeze out as much air as I can and make the package flat,you can get a lot of kale in the freezer in not a lot of space.

I came across another kale soup recipe I have not tried yet,but it too sounds yummo.
Saute bacon chopped into lardons in a skillet.Drain off fat,remove the bacon and add onion and saute.Add a chopped clove of garlic,2-3 cans of chicken broth,and a couple of cups of chopped kale leaves.Simmer til the kale is tender.Either use a hand held blender,use a regular blender or a food processor and blend til smooth.Add half and half to taste,ground black pepper to taste ands garnish with the bacon.

I do not identify kale as human food. I'd feed it to a rabbit, then eat said rabbit.
