What's for dinner tonight?

Yesterday, I got a new crock pot cookbook (it's from Taste of Home). Before I came into work this morning, I filled my crock pot with ingredients for beef fajitas for tonight's dinner; it's in the computer room cooking away. When I get home, I just have to make our salad and life will be good.

What are you having for dinner tonight?

Well LAST night, I made chicken and vegetable pasta in a savory garlic cream sauce with fresh out of the oven, homemade Swedish Rye Bread from an old family recipe. I was so proud of my self. It was the first time I've ever made the chicken stuff and it was the first time I made the bread without the close supervision of my mom. It was my first official homemade (from scratch) meal I've had in my new apartment :-)

Oooh both dinners sound good!
Today I'm using my slow cooker too. I'm going to make pea soup with bits of grilled back bacon in it.

Still deciding... Dishes DESPERATELY need to be done, but that's Dana's job and I'm holding out. Possibly a bbq. Maybe a cucumber salad as well as I have some I need to use before they go bad.

I have no IDEA what I'm going to have tonight, but last night I had Italian flavor meatballs, no sauce as I hate that, and a cucumber, lettuce, and carrot salad.

It's just me and the kids tonight since Craig is working, so we usually have sandwiches or something simple.

Well, it's Wednesday, and that's fajita night at Los Lupes! It's only $6.95, beef or chicken or combo.

Good question I have class tonight til 6, then we are supposed to get back to the gym after 1½ weeks off from being sick. Probably either pick up thin sliced chicken breast and cook it with italian dressing, or make burritos (simple ones - lean ground beef, cheddar cheese, tortilla )

I was just thinking about split pea soup today.... I might make some on Saturday actually. It's been a while!

Dinner tonight will be.... I don't know, but it will be like a late lunch/early dinner, because I don't like to eat right before I have to leave for class which is around 6:20. It will probably be a sandwich or veggie burger. But soup is sounding really good.. Actually I think I'm going to make a small pot of it now! (I didn't eat breakfast yet and it's almost lunchtime, so in an hour or so that soup will be awesome!)

I have some new cookbooks I need to try out too, including a bread machine recipe book. I love cooking new things, but it's just been busy lately with school and BF's work and travel schedules... soon!

That's what I made for dinner last night but I use ham hocks instead of bacon. I split pea soup!

Well, I have symphony rehearsal tonight, and I wasn't going to cook anything. But I just saw a meatloaf recipe that looked really good, and I'm SURE my son would really appreciate it if I cooked dinner tonight LOL. Plus then I'll have leftovers!

The recipe called for top sirloin. We are big flank steak fans, though, so I used a nice flank steak. I'm hungry, too! It's been bugging me all day!

Just a hint: Do some looking around. The normal price at Los Lupes is $10.95, I believe.

When we're not too hungry, we can go in, get a plate of fajitas and share it, the drink special (regular margarita), pay a very generous tip (30%), and get out for $15. But the trick is to find a local place. Mondays are often good. This place has an enchilada special Monday nights for $4. They have four or five restaurants in the Metroplex, and it's clearly a family-run business.

A place that's really Mexican can be a good bet, too. Taqueria Arandas comes to mind; I don't know their prices, but they aren't upscale. Edit: I just checked their website, and they're not cheap. But there are a number of little hole-in-the-wall places that are very inexpensive.

And yes, it's easy to pay over $20 for fajitas for two.

We had this thing not sure what it's called but my mom made it up..sort of. last night that has homony, cheese, refried beans, and cornbread on top. Not sure what's on tonight's menu it's barely after lunchtime here in the US.

I think this is a good thread for me to post in (especially considering I've been having some difficulties in eating my meals).

Tonight, I am cooking dinner. I am making a boneless pork chop bake with broccoli and creamy mushroom soup. And, I am also making mashed potatoes. I entered the ingredients I had in the pantry online and found a recipe that would work. I wanted something that was a good, stick-to-your-bones type of meal and this seems to be a good option. Hopefully, it looks and tastes as good as it sounds.

I suppose I'll let you all know how it turned out later. And, it will also be a good way for me to be accountable about eating my dinner tonight. So, here goes nothing!

The only Mexican place that I know of (just checked the menu online) is $23.99 for a single order of fajitas and $35.99 for fajitas for two.

For Mexican, we go to Casa Sanchez. They have what's called Texas Fajitas that are just outstanding. Two fajitas for $15.25.

Chips and salsa....there's something about their hot salsa that is so good.

But, I admit it. I go for the margaritas. I usually get the Blue Margarita, made with Jose Cuervo Tequila and Blue Curacao. A medium margarita is $10, but I swear I could swim in the glass, it's that big. I love margaritas and this is delicious. My girlfriends all order dacquiris, but I always get a margarita.

My on-the-fly pea soup was yummy! I threw in some onion, garlic, mushrooms, celery, broccoli, split peas, lentils, spash of sherry, and a Rapunzel Sea Salt & Herbs bouillon cube and simmered it for about an hour or more. I usually put carrots in, but I realised I have none! I also had some Mrs. T's pierogies with it. MMMMM! Since I had that around 1:30, I think I will have a nectarine soon for 'dinner'.

I just finished eating. Made Sesame Pork with noodles - pork seasoned with sesame oil, soy sauce, rice vinegar and green onions. It was very yummy.

We had our simple burritos. Though Rob added some shredded lettuce and light sour cream to his. Ate them way too late too but we got started late working out and didn't leave til almost 9!

I'm just getting back to this now, but I said I would come back and post about how dinner went. So, here I am...

The pork chop and broccoli bake with cream of mushroom soup came out wonderfully. I had browned the chops before baking them in the oven and I think that was key. That way, they were seasoned beforehand and, once in the oven with the broccoli and mushroom soup, had time to simmer and slowly cook the rest of the way. In the end, they came out so tender that I didn't need a knife to cut them. The broccoli was good, but I wish I had added some cauliflower to the mix for variety. And, the mashed potatoes were also delicious -- some garlic and a little butter helped them melt in my mouth. All in all, it was a successful meal on all accounts.

Now, if only I could figure out what to make for tomorrow...
