Pulled Pork if it's a hot meal, or grilled chicken caesar salad for a light fare.

Yum. I'm gonna do the grilled chicken tonight.

. I am just glad it does not show on my hips

Anything I can put into the crock pot. Even if I have to sear a roast or brown ground chuck in the morning and put it all together, something is in the crock pot cooking all day and I don't have to cook when I get home late from work and meetings. I just throw together a salad....or Rick will do the salad. And life is good.

Broiled bourban marinated salmon.

I buy it pre-marinated, so I just pop it in the oven for 10-15min on broil and voila, dinner is served!
Having that tonight for dinner

Steak, baked potato and a veggie or if I'm really in a hurry or just plain lazy a frozen dinner will do just fine.

Rigatoni, with canned crushed tomatoes, olive oil, and tuna. Had this on a cruise years ago and it's fast and easy.

Something I 'invented' because I can't read...no really, the siggy line is true.
Started to make tacos one day - browned the meat, added the seasoning, and misread the directions so added a tin of tomato soup to the mix. Turned out great and have been making it that way ever since. I do add green peppers or tinned mushrooms to give it something extra. Takes about 20 minutes, start to finish.
Another thing I make is one packet of Uncle Ben's Fast and Fancy wild rice, cook it up, throw in a handful of frozen peas and a tin of salmon (tuna works but I hate tuna).
Both are one dish meals, and under half an hour prep/cook time
.

Vegetarian Chili !!!!!!!!!! In the slow cooker. Quick, easy and OH so yummy. Dinner for a few nights. Although, too many beans don't make for a very fun evening with Larry
