Thought of you this week-end. SIL family and us two processed 16 doz ears of corn this weekend. We blanched and cut 4 doz ears for ourselves. Came out with 29 qt bags for the freezer. Hubby and I cut corn for his sis while she slept in this morning. She will bag hers and also some ears for her freezer. (there are 4 of them in their family). It was fun, we had propane burners outside boiling the water and ice chest with water and ice full to blanch. The yellow jackets were horrendous though. We had three traps and they still wouldn't leave the corn alone.
If tomatos are ready next week-end we will be canning those, if not the week-end after. We actually have a lot of fun and laughs all pitching in to get it done.

See, now I would love to help out with that! Imagine all the fun you're having while you're doing things. DH and I did our corn; we didn't do nearly that much.

You guys are amazing, doing all that food! Kudos! And think of how good your corn is going to taste this winter!

I'm really looking forward to canning tomatos and tom. juice. It's a pretty messy process but all hands on deck should make it easier. I'm surprised that my DH has taken to preserving so well. I think his sis cracking the whip helps!

Maybe your DH just enjoys it. Mine really surprised me a few years ago when he made some strawberry preserves out of the blue. Now he's really gotten into it, does pickles, etc., and uses a dehydrator, too.

I've just finished cooking the last of this year's corn (and ate two ears for lunch). I'm not going to freeze this small batch, since the ears are so easy to reheat in the microwave.

I know that Rick has turned into quite the farmer. He really enjoys spending time in the garden at night after work. Last night while we were picking tomatoes (was it me who said that the tomatoes weren't ripening?? Oy! Famous last words!), he said that he can tell that the garden is almost done and it made him sad....fall and then winter will be here.

He's been helping me with the vegetable prep work, but the canning thing is mine. He wants nothing to do with that as it still scares him a little bit. But he washes, chops, and helps me freeze all the vegetables.
