It's a plethora of zucchini!

Somebody take some of the zucchini off my hands! Please!

I had four really nice zucchini in the fridge. While I was going through some cookbooks, DH came into the house with five more. And three nice cucumbers.

So...I made Zucchini Dessert Squares (I swear if you didn't know better, you'd swear they were apples. Very yummy. The guys at work tore into them this morning.) And our dinner last night was Zucchini Garden Chowder, made with lots of zucchini, tomatoes, chicken broth, evaporated milk, etc. That was just delicious, too, with some warmed-up breadsticks from the freezer. And I made some zucchini muffins that went into the freezer. All three recipes are winners.

Made more Fire and Ice Tomatoes (I can't wait to make them with fresh tomatoes from our garden). And we had sliced cukes with our soup. I may try to make some pickles since my mom gave me her pickle recipes and I just love all kinds of pickles.

I also froze three 1-quart bags of broccoli from the garden, too.


But geez, there are zucchini that will be ready to be picked within the next couple of days! I wish it was possible to freeze them.

I can share! Really, I insist!
Anybody? Everybody?

Actually, nothing like a nice cinnamony zucchini bread.

I freeze zucchini and squash both. Slice it and place flat on a cookie sheet lined with wax paper. You can add layers, just use wax paper in between the layers. Place in the freezer until completely frozen, then they can be removed from the sheet and stored in freezer ziplock bags. It's not quite as good to eat it raw after freezing but it works fine for grilling, sauteing or using in spaghetti sauce (which I love!). You can also freeze grated zucchini.

I was hoping to have a buttload of it this year, but the groundhogs destroyed our 6 plants. I did manage to get 5 or 6 good size ones though. I'd be HAPPY to take some off your hands! lol

I would grate it, freeze it and have it ready for the winter months for making zucchini breads, muffins, etc.

One way to keep from having too many of them is to eat the flowers; clean, bread with egg and flour alternately and deep fry. Delicious! I usually do up a platter of the flowers, zucchini itself cut in medallions, cauliflower and mushrooms, put the bowl of lovely, crispy, veggies in a dish on the table for the family to snack on.

I wish I had some fresh zucchini!!!

A few years ago my brother asked me if I wanted some zucchini from his garden. I told him that I would love some!

He arrived with 3 zucchini that looked like they had been on steroids! I swear they were about 1 1/2 feet long and 4" in diameter!

I ate a lot of zucchini over the next week or so!!

I love zucchini bread, so if you made some, I'd gladly take some zukes off your hands that way!

Didn't you mention an upcoming yard sale? Sell some or give them away then, people love homegrown produce!

Haha! The veggie drawer in my fridge is like 85% zucchini and summer squash! And we've given the like 5 zucchini and 2 summer squash to our neighbor!

Isn't it wonderful how eager some plants are? The universe may be doomed to entropy, but squash plants are fightin' it all the way!

If you like pickles,I know there are some recipes out there for zucchini pickles.Also if you like quiche,it's wonderful with some onion and mushrooms and maybe a little cheese.There's a dish I have made called ratatouille,and it's made with the zucchini,eggplant,tomatoes,onion and garlic....a little bacon is nice but not necessary.It freezes very well and is wonderful just as it is but is also great on spaghetti,in pasta casseroles,etc.I think somewhere I remember seeing a recipe for zucchini jelly.Have fun and enjoy!

Thank you, thank you, thank you! I started slicing my zucchini and freezing it on wax paper the way you describe. We do use it in salads, but I do love it grilled and sauteed. And I use it in spaghetti sauce and in zucchini lasagna.

I have also grated some in the food processor and have frozen it in 2-cup portions for use in breads, muffins, etc.

Lizzie, I have a great recipe for zucchini pickles (it's from one of my aunts) and have made some pickles, too. I make ratatouille sometimes, too, but never froze it. (But I think I'll pass on the zucchini jelly.) Thanks!

We had a zucchini cake made by a coworker of my husband's at a party not too long ago... ohhhhhh man it was delicious!!
I wonder if it was healthy...

I looove zucchini! I've been making zucchini bread every week all summer, and last week I decided to add fresh blueberries - SO GOOD! I highly recommend it.
I also made a zucchini parmesan last night with sautÃ[emoji]169[/emoji]ed mushrooms, onion, zucchini, and garlic. I mixed it with some pasta sauce and put cheese on top and baked it. It tastes really good on pasta or on a sub roll.

I found a recipe for lemon zucchini bread and I want to try that; but add blueberries too. Maybe I'll do one just lemon and one withe blueberries. I bet that would be good for the summer squash bread too. I need to have a baking marathon; but first I need to finish clearing the island in the kitchen....

Hey Mooch, care to share the recipe for the lemon zucchini bread? Please?

Tonight, we're having stuffed zucchini as our dinner. Rice, mushrooms, onions, peppers, chopped tomatoes, with shredded cheddar all stuffed into zucchini halves. Finished on the grill. Yum!

I stopped at my MIL's this morning on my way to work with several zucchini, some nice cukes, and some green beans. She was thrilled to get them.

Some of what we picked last night (this is a big basket and we filled it, plus DH brought some green beans to the house in his shirt).....see the little cherry? It's one of our cherry peppers. They are just delicious!

I am freezing tomatoes too, skinned and pureed and ready for spaghetti sauce.

Now can someone tell me why my cukes are bitter?

I love your garden bounty! Those tomatoes look wonderful! I would love to be able to enjoy one of those beauties!!!

I'll get some zucchini recipes posted, if not tonight, then tomorrow.

I'd like others to share their recipes, too, please! I need all the zucchini recipes I can find!


You know, somebody on another board mentioned that they had bitter-tasting cukes and one of my GFs here at work had some beautiful cukes, but when she tasted them, they were bitter. Not tasty at all. Could it have something to do with all the rain back during the spring and now no rain and the high temps?
