No Beets!!

I've been absolutely craving borscht! So I went to Safeway this evening to do some shopping. I made sure I put everything on my list that I need for beet borscht.

The produce aisle was the last aisle on my shopping list with the root vegetables being my final stop.

I got my cabbage and carrots. When I got to the beets, they had 3 beets about the size of ping pong balls.... ok, well maybe golf balls. Either way they were small.

So much for making borscht tomorrow!

Oh...... well that just stinks, doesn't it?
Especially since you're craving it! Any other nearby stores you can try?? I hate when I'm looking for a specific thing in the produce section and the store either doesn't have any, or the ones they do have are pitiful.

I've never had or made borscht. Sounds good though, judging by recipes I've seen for it. Perhaps someday...

MmMMm Borscht. DAMN now I am craving it too! mmmm heavy on the dill. *drools*

I too say pop into another shop and hunt some beets down!

I made borscht once more than 2 decades ago. I couldn't even remember how to make it. All of the recipes that I found didn't sound like what my Mom used to make.

So I called my Aunt today and asked her what she puts into her borscht. I'l likely go to another market on Wednesday to see what they have.

Do you have a Wegman's or a Giant Foods (also known as Bi-Low or Martin's in some U.S. states)? They have large beets. Also, is there a farm market nearby? Maybe they would have nicer ones.

I never liked beets until I grew my own. I like them roasted in the oven, in olive oil. Roasting makes them nice and sweet!

Oh man, you've given me a beet craving now! Harvard beets....yum! Pickled red beets....yum again! Never had borscht and it doesn't really seem to trip my trigger all that much, even though I love, love, love beets. Roasted in olive oil makes them just wonderful.

MargeCat, count us in among the Giant fans. That's the only grocery we shop in anymore. I'll have to check now and see if they have beets.

We planted some beets in the garden this year and, so far, they seem to be doing well.

No, we don't have those stores here. There is a market not far from where I am. I'm actually thinking of going today instead of tomorrow. I really want to make that soup!

A couple weeks ago I went to dinner with a friend to a falafel place. They had borscht on the menu so I had a bowl. It was so yummy that I was considering a second bowl, but the price was $6.00! So I passed on the seconds. My friend had never had borscht before and thought it sounded "gross", but I convinced her to try it telling her that she can't say she doesn't like something until she tries it (I'm going to regret saying that to her in the future!!), but she tried it and found that she really liked it.

If you are stuck and can't find fresh beets, frozen or even tinned will do, just make sure, if you go the tinned route, they are plain and unseasoned. Many women around here made borscht with home canned beets and later with home frozen ones with no difference in taste.

YES!! EXACTLY!! so good, FRESH DILL IN THIS!


Now I'm going to dig out my mom's recipie for Borscht (a vegetarian version) that is to. die. for:

6 cups shredded cabbage (1 whole small head green cabbage)
3 shredded carrots
1 cup vegetable (or beef if you prefer) broth
1 15oz. can great northern bean (rinsed and drained)
1 15oz. can diced (or whole, cut up/smashed) tomatoes
2 15oz. cans sliced beets (UNDRAINED)
1 8oz. can tomato sauce
1 large onion, sliced and ringed
1/4 cup brown sugar (or white if you don't have brown)
2 Tablespoons vinegar (I add a bit more)
1/4 teaspoon of pepper (I add a bit more)
1/2 teaspoon of dillweed (I'm assuming this is dry-TRY TO USE A NICE BUNCH OF FRESH DILL, if you can)
sour cream (optional)

In a large kettle (4 qt. dutch oven), combine cabbage, carrots, veggie (or beef) broth, beans, undrained tomatoes, undrained beets, tomato sauce, onion, sugar, vinegar, pepper, & dillweed. Bring to a boil, then reduce heat. Cover and simmer for 20 minutes.

Add a dollop of sour cream on top of each serving.
