Tonight is my typical "I have a cold and I feel miserable" dinner of chicken fried rice and hot and sour soup from my favorite Chinese place up the street! It always makes me feel better.

We made chicken enchiladas tonight, and I'm really pleased with how they turned out. (That's good, given that we'll be eating the leftovers for at least another day or two!)

I have a small steak marinating in the fridge. DH will grill it, then slice it for over our salads tonight. That's pretty all we're having. Grilled steak slices over a salad of greens and various veggies. Topped off with a tangy tomato dressing that I made last night. And some smoked mozzarella chunks. It's too hot here to have a big dinner.

Zucchini with rice baked in a pan and egg whites, yogurt and flour mixed and poured over top. It's my aunt's recipe and her vegetarian take on a moussaka. I got food poisoning so I'm laying off of meat for a while (the thought of it makes me sick)

Last night i made a garlic & herb pork loin, sweet peas, and texas toast. Tonight is date night, and I think I want to go to Logan's Roadhouse and have some salmon, broccoli, house salad, and yeast rolls!

I love to cook but tonight is not the night for it. I've been at the barn playing with my horse today and it is hot as blazes here. I'm tired so I'm grilling some polish sausages and I'll make some kraut. I want to make some German potato salad but I'm just too tired so I bought some deli potato salad at the supermarket. Fresh strawberries for dessert and popcorn for late night nosh

Grilled pizza. I made the dough yesterday and it spent the night rising in the fridge. I'll take it back out around 11:00 to bring it to room temp, then when DH comes home from church around 1:00, we'll have dinner before working outside for awhile. Leftovers will be for supper tonight....that man just loves grilled pizza and he asked me yesterday morning to make pizza dough.

For toppings, we have pepperoni, mushrooms, and slices of green and red peppers. Some slivered ham and chopped pineapple for Hawaiian pizza. I made the sauce this morning and threw that in the fridge, too.

I had homemade pizza last night. Although I didn't make the base. I had pepperoni, tomato base, lots of cheese, diced onions, mushrooms and cream cheese

I still have one pizza base so I was thinking of making a chicken, jalapeno and avacado pizza tonight.. but not sure.

Going to have last night's supper (maid rites, chuckwagon beans, and strawberry shortcake) tonight. Had it all ready last night when DH calls from work to tell me "I sent one of the cashiers to Taco Bell to get me a box meal for break, and she came back with a 12 pack box of tacos; I'm bringing home most of them." Ok, no problem--just put everything in the fridge.
Have you ever tried to eat a 3 hour old, cold taco? I'm not a big fan of Taco Bell's tacos in the first place, but those things were inedible.
I guess it's the thought that counts, huh?
