Food photos from last night.

Last night's party was the first "big" party I've hosted in about 6 years. I've just been too sick to deal with it all. I was pleased with the assortment of food that we had, and decided at the last moment to photograph it. Thought I'd share (and hopefully not make you all TOO hungry.) LOL

First was my vegetarian chili. I was happy to finally find a recipe that was really good. The other vegetarian at the party loved it as well, and went home with my recipe:


Next, homemade cornbread:


The other vegetarian guest made some veggie sausage rolls which were absolutely OUTSTANDING! I have to find the "sausages" he used so I can make some myself:


My "cat" neighbors brought smoked salmon and cheese. Ziggy and Brillo went crazy over the salmon scent, and I caught Brillo in the cheese at one point:


For dessert, I made caramel corn:


And the hit with the little boy who was present, chocolate chip cookie ice cream sammies. I will definitely make these again:


We also had "meat chili" along with the usual chips/dips, pizza, etc. My poor neighbor decided to make "fancy guacamole" and used hard avocados which she put in the blender with MILK (ew, LOL) and other stuff. It was a soupy mess that she asked me to compost for her. I decided it would be kinder not to photograph it (altho I will talk about it, LOL). She is Latino, too, which makes it all the funnier!

OMG the tomatoes and cheese and salmon look sooooooo good!!! How did you prepare the salmon btw?

My neighbor brought the salmon tray, and I know it was smoked salmon, but she just opened a package. :p

Love those cookies!! And chili. I could eat chili every day and never get sick of it.

I would have hung out at the table!

MMM, looks good!!


We went to a very meaty superbowl party, but I brought some veggie sausages for the grill, and made some Goat Cheese & Chorizo Rolls, but I used Soyrizo instead. They came out really good! I found the recipe kind of by accident, just browsing and not even really looking for a recipe. But it sounded so good I decided to try it. OK, here's the chili recipe:

Veggie Chili

1 can black beans, drained
1 can pinto beans, drained
1 can diced tomatoes
1/2 onion, diced
3 cloves garlic, minced
1 bell pepper, diced (any color)
2 tbsp olive oil
1/4 cup vegetable broth or water
2 tbsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
dash cayenne pepper (optional)
dash red pepper flakes (optional)
1/2 cup TVP (veggie crumbles/fake meat) + 1/2 cup water (optional)

Preparation:
In a medium to large soup pot, sautee the onion, bell pepper and garlic in the olive oil.
Add tomatoes, vegetable broth and chili powder and stir.

Reduce heat to medium low and add beans. Stir occasionally and cook for at least 20 minutes. Add TVP and water 10 minutes before done cooking. Of course, the longer you cook chili the better, but if you're pressed for time, 20 minutes is fine.

For a spicier chili, add extra cayenne and red pepper flakes. Makes 6 servings.

I did mine in the crockpot and put the pepper, onion and garlic in the oil for an hour. I then added the remaining ingredients and let it simmer for a couple of hours. I added the crumbles in on the last 45 min.

I will get the caramel corn recipe for you tomorrow, as it's downstairs and I'm lazy and a bit pressed for time right now (daughter's doing homework and I'm offering support!)

Caramel corn?!? That sort of made me chuckle, because I'm famous (amongst my friends
) for the caramel corn I make and bring to our annual Superbowl party. I couldn't go last night, because I was feeling a little under the weather, so you should have seen the reaction I got from people. "No caramel corn?!?!?"


Apparently it was ok that I wasn't there, but missing caramel corn was an unspeakable tragedy.

I get the same reaction at every potluck here in the 'hood. In fact, when I was in the hospital locally, in critical condition, one of my neighbors was working in the hospital and asked if I could make a TURKEY the next week for her family Thanksgiving. I almost smacked her!!! Yes, she was SERIOUS!

NO, I didn't make the turkey, nor attend the dinner at her house.

I'm sure they will expect the caramel corn at every SB party from now on as well.
