I have no clue yet. I need to look through the freezer.
Sorry....I goofed. It was actually Moroccan, not Mongolian. But it was quite good! I halved a chicken breast instead of using thighs. Substituted raisins for the chopped dates. The recipe was full of scallions, cumin, cinnamon, garlic, and cilantro. Served over couscous. Low-fat, too. Delicious! I'll definitely be making it again.

I pulled a large pork chop out of the freezer last night for dinner tonight, but not sure what we're doing with it yet. I may just grill it indoors and have it with a twice-baked potato. DH and I will share the chop and the potato (the potato is gigantic!) and I'll throw a salad together.

YUM. Just had the yummiest dinner. Just had a apricot and cream cheese filled chicken breast from the local butcher, potato skins and broccoli and cauliflower with cream cheese.

Waffles with berries and maple syrup for dessert!

A whole waffle for dessert at dinner...
That is interesting! Never have I thought of it as a dessert but instead a breakfast food. I can totally see where it could be a dessert though.

That filled chicken breast sounds decadent!
Trying a new recipe tonight.....chipotle dijon pork tenderloin on the grill. The marinade is chipotle peppers in adobo sauce, minced garlic, lime juice, cumin, and cinnamon. With roasted sweet potatoes, onions and carrots. We'll probably end up using the indoor grill, depending on whether it's snowing.

My wonderful dad got me whatever I wanted for dinner tonight and I chose sushi, miso soup, tofu, brown rice, and veggies. So full, so good.

I know this was yesterday's thread, but for dinner last night I made homemade chicken and dumplings which were yummy. The kitties love chicken and dumplings night because they get to nibble on the chicken. They line up in the floor waiting on it. It's so cute to watch them.

I haven't had chicken and dumplings in years. My mother and grandmother made really good chicken and dumplings but I never was able to make them right so I haven't had them since several years before my mother died in 1986. A friend of mine had a cat that did that while a turkey was roasting. As soon as the scent from the turkey started she would sit in front of the oven until it was done.

It took awhile, Denice, for me to get this recipe like my mama's but I do believe I have it now and the kitties thank me for it. LOL.
