That filled chicken breast sounds decadent!
Trying a new recipe tonight.....chipotle dijon pork tenderloin on the grill. The marinade is chipotle peppers in adobo sauce, minced garlic, lime juice, cumin, and cinnamon. With roasted sweet potatoes, onions and carrots. We'll probably end up using the indoor grill, depending on whether it's snowing.

I know this was yesterday's thread, but for dinner last night I made homemade chicken and dumplings which were yummy. The kitties love chicken and dumplings night because they get to nibble on the chicken. They line up in the floor waiting on it. It's so cute to watch them.

I haven't had chicken and dumplings in years. My mother and grandmother made really good chicken and dumplings but I never was able to make them right so I haven't had them since several years before my mother died in 1986. A friend of mine had a cat that did that while a turkey was roasting. As soon as the scent from the turkey started she would sit in front of the oven until it was done.

It took awhile, Denice, for me to get this recipe like my mama's but I do believe I have it now and the kitties thank me for it. LOL.

Tonight is Meatless Monday for us, so we'll be having either spinach quesadillas or a vegetarian taco salad.

Tonight I baked corn bread in the iron skillet. We had chicken and rice for supper. I make it very thick, with carrots and celery. On the side, we had peaches and cottage cheese. It was a great meal.

Tonight it's either leftover beef-veggie soup or leftover fettuccine alfredo. DH is also craving pizza, so we might order pizza.

Well, last night, we ended up with the spinach quesadillas, so this morning, DH said he was hungry for tacos. I asked him about the vegetarian taco salad and he agrees that was a good choice, even thought we just had the quesadillas last night. Guess we're having taco salad.
