Well I'm working tonight and I get free burgers - so a burger it will be. I'm thinking grilled chicken breast, wholemeal bun, fresh avocado and lots of spicy jalapenos, aioli, salad and relish. Maybe some pineapple rings.

Sorry....I goofed. It was actually Moroccan, not Mongolian. But it was quite good! I halved a chicken breast instead of using thighs. Substituted raisins for the chopped dates. The recipe was full of scallions, cumin, cinnamon, garlic, and cilantro. Served over couscous. Low-fat, too. Delicious! I'll definitely be making it again.

I pulled a large pork chop out of the freezer last night for dinner tonight, but not sure what we're doing with it yet. I may just grill it indoors and have it with a twice-baked potato. DH and I will share the chop and the potato (the potato is gigantic!) and I'll throw a salad together.

YUM. Just had the yummiest dinner. Just had a apricot and cream cheese filled chicken breast from the local butcher, potato skins and broccoli and cauliflower with cream cheese.

A whole waffle for dessert at dinner...
That is interesting! Never have I thought of it as a dessert but instead a breakfast food. I can totally see where it could be a dessert though.
