Turkey soup recipe help please

Hi there, hope you all had a good Christmas,
Well I've got loads of turkey left, quite a bit of veg but no stock cubes or anything, I would love to make a soup though tomorrow, can anyone give me a recipe without using a stock cube for a lovely thickish soup (I hate the watery ones). Thankyou.xx

Well, I just threw the carcass in a pot of water to cover, added veggies, pepper, bay leaf, and boiled for quite a while. Then I cooled it, and strained it, picking out the meat and putting it back in the broth. Then I added rice, although wild rice would be even better, and heated it up again.

Mmmm, yummy, rice sounds nice in with it, my dh is quite picky so it will have to be tasty, thankyou.x

Make the stock

1. Add the carcas and whatever left over turkey that you have to a large pot. Add a few large bay leaves. Wrap up some rosemary, thyme and peppercorns in a bit of cheese cloth and tie it up and put it into the pot.

Do a very large dice of the following and add it to the pot: carrots, celery including the leaves, onions including the skin.

Add water to cover. Add liberal salt. Sometimes I add a bit of curry powder for a bit of extra flavour.

Bring to a boil, then reduce heat and simmer for about 3 hours.

Strain. Reserve the chicken. Discard the veggies, bay leaves and cheese cloth spices.

Soup....

2. Add the liquid back to the pot. Dice up some carrots, celery, onions and parsnips. Add to the stock.

If you want a thicker soup, remove some of the broth and cool it down. Mix it well with either some cornstarch or flour and add it back to the stock. Cook until done. Season with salt and pepper as needed.

That sounds yummy too, I read about adding flour to make it thicker, I love thick soup like I love thick gravy.Thankyou, I hope it goes well, I bet I end up just chucking it all in and hoping for the best

My mam makes a lush turkey soup/stew ill ask het tomorrow how she makes it

That's pretty much what making soup is all about! There is a substance within the bones that by boiling them in with the meat and such will add thickness to the liquid.

I have beef stock cubes thats all, think I need to take a walk to tesco express and get some chicken or vegetable ones or it isn't going to be nice, I definetely like the idea of adding rice though.I just fancy a winter warmer, I have eaten so much these past few days I just fancy a nice soup and warm rolls.xx

I save my chicken and turkey carcasses in plastic bags in the freezer throughout the year.When I am ready to make soup,I thaw them and put them in a big roaster and roast them til there's lots of brown goodies everywhere.Then they go in the stockpot with all the goodies,veggies,bay leaf,thyme,garlic,salt and pepper and simmer for hours....strain...skim off the fat...cut up fresh veggies(carrot,celery,onion,garlic and whatever else catches my eye at the time) and leftover meat and throw that in the pot.My family likes homemade noodles in ours,so in they go just about at the last minute because they cook so fast.I usually end up with a couple of gallons,which I freeze in containers.We eat a lot of soups this time of year.Nothing warms these old bones like it!

That sounds so weird putting a carcass out for a fox. LOL here we put things out for the birds. I didn't know Foxes ate meat

Oh my gosh do they, we have often put carcasses out. Christmas day night we had a baby forx in the garden and it was aazing to watch, I was worried about the rabbits but he/she never went near them. x

Yes, like Ash said they'll eat anything. I've had my shed door wedged open a bit incase they wanted some shelter from the snow, and i keep topping up a bowl of kibbles for them in it and they eat the lot!
