Any Veal Recipes?

We have a package of Veal Strips that we need to use so I am trying to figure out what to make! I've found a few recipes that sound intriguing but I was wondering if any of you guys had one you loved? If so can I borrow it? If its good I may, if you want, get you to write a guest post to put on my cooking blog!

Most veal available today is more baby beef than true milk-fed veal. If it were available I probably couldn't afford it and also would be reluctant to purchase it because of how the calves are reared. With that out of the way - more a definition of terms than a complaint

Two recipes in Julia Child are excellent - Saute of veal marengo is cubes of veal with button mushrooms and some orange peel. Delicious.

The other is blanquette of veal a la ancien, also excellent.

If you cannot find the recipes on-line let me know and I'll transcribe them from my copy of mastering the Art of French Cooking, volume I

With veal strips I always just bread and then pan fry them. Nice and simple and oh so yummy! I always mix butter and olive oil for the frying, to add depth of flavour. Very quick to fry as they're so thin that they don't need long.
