Making a carrot cake

I have a rescipe for one and it is in the oven right now. and the homemade frosting is in the fridge, I can't wait. And there is a meatloaf in the oven

I would but the cream cheese icing, which is homemade, might melt along the way or the customs guys might help theirselves to your cake. I also made some taters which were cut up with the peelings and mixed with salt, pepper, garlic powder, bacon bits, shredded cheese, and ranch dressing and baked so I can send some of that too.

Carrot cake is one of my favorites! I've never made it, which is surprising, since I love to cook. Enjoy!

OMG it was so good, I cut a piece while still warm, but it is very rich I will remember that next time and get a smaller piece.
to my carrot cake it was so awesome.

OMGosh, my DH would have been at your house in a flash had he known you had a fresh carrot cake coming out of the oven! He just loves carrot cake and I don't make it that often.....it's a pain grating all those darn carrots!

The pain was messuring them and I just used my food processor to grade them and put it on low and it worked pretty well. But I had baby carrots and it calls for two cups and I was a bit off and it called for a 15 1/4 ounce can and after I put it in the cake I realized it was a 20 ounce but it still tasted good just took a little bit longer to bake. And I didn't have all purpose flour so dad told me to just omit the baking soda and powder and it would be okay
