In my opinion (and that is my opinion), the same rules in dry apply to wet - the only thing that makes different, and better, is that it has more moisture. And moisture in food is MUCH, MUCH better for the cat, since they are believed to no be good drinkers, and get most of their water from food. There is also a belief that the water is better utilized when consumed with the food, thus another advantage of wet food.
Dry food use binders to keep the kibbles together, so they are in general higher in carbs - although there are exceptions to the rule... EVO for example is extremely low in carbs, lower even than a lot of wet foods.
With so many choices in the market, you have the chance to choose both quality ingredients for wet and dry foods. I believe that the quality stands for both.
I do not feed By-products, period. Now I am feeding one grain, rice, due to the fact that one of my cat having recently been hit with an UTI. Grain-free foods are not really advisable for UTI prone cats...
You see, there are the general guidelines in grain, carbs, etc, but in the end it will come down to your cats' needs...
