egg replacers in cake..

So I think I got in a little over my head....
I need to make vegan cupcakes by Saturday night. I tried a test batch just now, using a cake mix. To replace the eggs, I searched online and found some ideas.
Some of the ideas include using an actual egg replacer product (not possible for me) while others suggested applesauce, tofu and one said to use a mixture of water/oil/baking powder. I decided on the last one, which was 2tbsp water, 1tbsp oil and 2 tsp baking powder per egg in the mix. I also used vegan butter. They came out awful. They are oddly textured, and the middle sunk in. I only did a small batch so I could experiment with the rest of the batter to come up with a good replacement. I am using yellow cake mix right now, but for the end product I plan to use a white cake mix (which takes egg whites, not whole eggs) and add a packet of pudding mix to the cake mix. Does anyone have ideas on other things to use to replace eggs? Do you think applesauce would affect the flavor too much if I used that?

Does it have to be made with a mix? I've been using this recipe for decades, and it's an unbelievably rich, moist chocolate:
Chocolate Cake (suitable for Vegans)

Mix
3 cups flour
2 cups sugar
2/3 c. cocoa
2 tsp. baking soda
1 tsp. salt

ADD
2/3 c. vegetable oil
2 tsp. white vinegar
2 tsp. vanilla extract

ADD
2 c. water

Grease and flour a square baking pan, and bake at 350° F. for c. 45 minutes.
Top/frost as desired.

I have a recipe similar to Tricia's, which is very good. Or instead of cake, make some sweet yeast buns, there are lots of recipes for those that don't use eggs or milk, and flavour with cinnamon, raisins or berries.

The butter I used with the mix was Earth Balance buttery spread...it was the only butter/spread/anything I could find at a regular grocery store that was vegan.
I decided to go with a vegan cake mix. We were trying to make it as cheap as possible and a cake mix was $1 and to have all the ingredients to make from scratch cost more, but I decided it was worth it to know it would be good.
If I wanted to make a white chocolate/white cake, instead of using cocoa in your posted recipe, could I use white chocolate pudding powder?? Do you know if the posted recipe would work for cupcakes?

I am participating in a cupcake baking contest Sunday and making two different kinds of cupcakes for the vegan category.
I am making a white cupcake, filled with soy pistachio pudding, topped with vanilla pistachio icing, and a peanut butter cupcake, filled with fudge frosting and topped with fudge frosting.

Seconding the applesauce motion! I've found that natural no-sugar-added applesauce really does make a great substitute in cakes, nutbreads, and cornbread -- but it works best if you reduce the other liquids a little bit and use more applesauce (by volume) than the recipe calls for in eggs (by volume)...if that makes sense.

The recipe is fine for cupcakes, but you should definitely use paper or foil cupcake wrappers because the cake is very moist. I couldn't tell you whether white chocolate pudding mix would work as a replacement for cocoa. I imagine the cupcakes would be overly sweet and rather sticky.

I have a recipe for applesauce muffins that are tasty but I think they also have some eggs in there.

I've tried things with just apple sauce to replace the dairy, and I have to agree with the OP, awful! Pretty darn tasteless and an odd texture.

I've never encountered having to cook for anyone who was so restricted in their diet, but I know I would be asking them to bring their own entree to dinner rather than me trying to sort out their food preferences.
