Are there any specific foods that your hubby won't eat?
There are great recipes on www.recipesource.com
Or you could buy some marinade and let chicken marinade in it for 10 mins - they have great 10 min ones, and cook it on the grill.
Last night I tried parsley potatoes - boil new potatoes until they are just right, melt some butter or margarine or whatever you use and cut up some parsley, mix the parsley with the butter and pour it over the potatoes - yummy!
I have a whole lot of recipes here.

One of my favorites is Salsa Chicken

Just take chicken breasts ( 3 pack is good ), season it w/ salt and pepper and put it in a baking dish w/ olive oil on the bottom. Add a jar of salsa ( mild or spicy )on top, cover w/ foil, and bake at 350 for 1 hr. YUM...serve w/ rice. The salsa makes a nice flavorul gravy to pour onto the rice!

You could also add some shredded cheese if you don't mind the extra cals!

One of my favorite hot weather low-cal meals is one that is hard to enjoy with cats around

Cook a box of elbow macaroni in boiling water until soft. Drain and run under cold water (in a colander). Drain completely and then add 1 large can of tuna, mayo (can use low fat), as much as is your preference (I use a lot), salt, pepper and diced celery. It's very yummy and nice and cool going down on a hot night.

Beat cats away with a stick.

Sweat an onion in a pan add a can of chopped tomatos a good dollop of tomatoe puree, a pinch of dried itallian herbs salt and pepper and a dash of balsamic vinegar or fresh lemon juice. Simmer over a low heat for 20 mins.
Serve with pasta. Or on a baked pot, or over a chicken breast or with rice or add bacon to it or chicken. It is so versitile and will freeze for up to 3 months. BTW It tastes better the next day! Enjoy, i live on the stuff
Enjoy!!
