That's just how kittens are. They can turn anything into a game. Most of us have even found a piece of dry poo on the floor before because a kitten has decided to fish it out and bat it around. 
Until then, try a box with higher sides and stick an extra mat or two around the litter boxes.

It's not just kittens. It's a normal cat thing. Many cats dig and scratch and dig and scratch.
Some will go so far as to scratch the walls and the floor too.
Some will bury with a high pile, some will not bury at all, some will kick so much that everything they just put in the box will be scattered across the entire box, or out of the box onto the floor unless you use high sided boxes.
I have or have had at least one cat who does at least one of the things mentioned above, at all times.
It's really just something that comes along with living with cats, dealing with their litter box antics.
