Actually, that's nothing! I've probably picked over 50 since July 2nd (when the first three were ready). Hence why no one wants anymore of them.
I have a few white squash, some zucchini that I'm going to unload on the in-laws later, and ~25 tomatoes in the fridge.

Fish and chicken always tastes great with lemon, so does steak for that matter. It works with other seafood, like shrimp, too. You could also try making up some sort of marinades with it and if really good maybe market it.

What do you do with squashes?? I am not crazy about the yellow ones that look like zucchinis, and I don't know about the others so I never buy them. I did make spaghetti squash once and that was really good, but other than that I am inexperienced.

Also.... i'm vegetarian, so I don't do the meat thing...
BF is a meat eater but he rarely cooks meat at home other than sausages now and then. We have a nice charcoal grill now so he should buy some meats and we can try some marinades! I love grilled veggies so I should try some lemon something or other..

Hey, for once I'm talking about food in this thread and I HAVE eaten, so I'm not starving all of a sudden!!

Nothing to be embarrassed about, except that you haven't tried more veggies!
The simplest way to prepare an acorn, butternut, or white squash is to cut them open, scoop out the seeds, and bake them with a little butter and whatever seasonings you prefer - you could probably add a little lemon juice to the butter.


You can also use them in various other dishes, pretty much the same way you can with sweet potatoes. In breads, soups, casseroles, etc. There's a chicken and acorn squash soup I need to try but it calls for a cup of cilantro so I'm not quite sure if I'd like how it would turn out.

NOOOOOO! I'm not only vegetarian, I'm a picky vegetarian!
And I absolutely HATE cilantro. Makes me physically ill. I almost have a phobia towards it. So I just will stop thinking about that right now.


So, moving along.... baked squash sounds yummy, I think I will try it this fall and/or winter! Thanks!

Saute onion slices in a teflon coated skillet with just a little bit of canola oil. Wash squash and cut into round slices. Put in pan with onions and cover. Pan fry them until they are slightly browned. Saute and pepper to season.
Yum.

That's it you have really made me want one now, that much that I have just been on ebay and I'm bidding on a lemon tree seedling
Might take a few years to get as big as your tree but I'll get there in the end

She doesn't like yellow squash, though. We're talking about winter squash - the ones with that are harder to cut up and you do not eat the skins from (well you could, but they're tough).

You can actually cut up and peel acorn squash but you need to be fairly bored and have nothing better to do because it can take a while.

Butternut squash is awesome if you just bake it (cubed, no skin) in brown suger and butter. It also makes a great soup. Fried summer squash is good. Leave the skins on, cut in slices, coat and fry. I use a coating of flour, parmasian cheese and Italian seasoning and fry in olive oil. This works for the green zuchinni too. I'm a big squash fan which is just strange because I HATED it as a kid.

OK, dumb question here- so when you bake an acorn (or butternut or whatever) squash, do you then just scoop out the insides onto your plate, or do you cut it up and trim off the skin? I really want to try baking some squash this fall or winter. It's about time!

Ruth- Are you seriously bidding on a lemon tree seedling???
I'm sorry, that just gave me a bit of a laugh. Where is it coming from? Good luck with it, I will be wanting updates!! I hope my little ones don't die while I'm away. Our friend who is watching Genever is going to come over a few times and check on the house and water the plants, so they should be ok. And if not, well.. oh well. There will be more, I'm sure. Not that I need any more..

Cut it in half - remove seeds, put a little butter and seasonings on it, cover with foil/or put in a covered baking dish, cook for 30-45 minutes (depending on the size of the squash), serve. You can put an entire half on your plate or just a quarter if you can't eat that much. Leave the skin on and eat the squash out/off of it - in the case of a half it's a bit like a bowl.


And they're not a winter food, btw. They're called winter squash because of their long shelf life. In the past people would store them down in their cellars over the winter. They'll also keep for a several weeks on your kitchen counter if you have AC. You could go buy recently picked ones right now as this is usually the time the plants put off - personally I liked them when they're not too old as opposed to waiting a few months and getting ones that have been stored. Veggies always taste a better when they're in season.
