Is there any way to fix liquidy potato salad?

I need help!

I made potato salad for the cottage tomorrow, we are having company come this weekend.

The potato salad is too soupy
I don't have any more potatoes...what do I dooooooooo?

Did you not let the potatoes cool?
Mom said that happens when you add the mayo before the potatoes cool. She said refridge and add more mayo tomorrow.

They cooled for about a half hour but it's possible they were not cool enough I suppose.
I will add more may tomorrow...

NP...Just relax. It will taste great

Shoot me a line tomorrow before 10am if you need more help from Mom. She will be leaving around then.

You can also use instant potato flakes and add that, or crush up some salted crackers or potato chips to soak up the moisture.

Some kind of cream of soup will work.

Like cream of onion, cream of chicken, cream of etc.,.

I use that stuff all the time for booboos

Put some bread into a big pan and pour the potato salad over top. Then once the excess moisture has been drained, put the potato salad back into a bowl and leave the soupy bread behind.

Or you can tie it in a cheese cloth and hand it from a rack in your fridge and let it drip into a bowl. That will get rid of the excess liquid.

Just what I was going to say. But as to the root of the cause, I would guess that you did not drain the potatoes well somewhere in the process or added too much dressing. After draining the water from the cooked, whole potatoes, I would put the pot back on the stove for just a bit to take out the excess moisture. After they cool and you slice them, what do you use for your potato salad base? Mayo, oil, or that new lite mayo with oil? Now, that new stuff might be a problem. I would, in the future, add the wet ingredients a little at a time judging for moisture content. Also, salt will increase the moisture so be careful when you salt. Use Hellman's/Best Foods Mayonnaise. That company sent me to college on a scholarship.


Lastly, bring a dessert the next time. So much easier!

PS I was just remembering a potato salad story. A friend wanted to impress her new boyfriend after he told her potato salad was his favorite food. She had him over for dinner and made the potato salad. Not having ever been much of a cook she some how forgot to cook the potatoes.

The guy must have liked her because he crunched through a whole serving without saying anything. She doesn't like mayonaise so she didn't eat it. It wasn't until the next day when she offered me some, and I took one crunch and spit it out that she discovered her mistake.

I laughed until the tears were running down my face. Sadly, she did not have much of a sense of humor about herself and was offended by my hilarity. I guess she thought I should have been polite like the boyfriend and ate it any way.

Never saw much of her after that, so don't know if the relationship made it or not.

My mom use to put hard boiled eggs in her potato salad... still the best recipe. And you must use BEST FOODS MAYO! Plus celery, sour pickles, onion, salt, pepper, black olives and dry hot mustard.

Depending on the size of potatoes depends on the amount of eggs. My mom did 1-2 hard boiled eggs per potato.

Oh sooo good.. now I want potato salad!

This is probably too late but I always find the potatoes absorb the dressing overnight anyway. Mine tends to be too dry and I need to make more dressing

That's a great story!!!!! Imagine that poor guy!! It would have been terrible. :flail:

I see the original post is from 2010!
 But I dearly love potato salad, so......

Use only Yukon Gold or red potatoes for potato salad....never use russetts or any other baking potato. They break up too much and the salad will get soggy. I don't even use multi-purpose potatoes, I prefer the Yukon gold or the reds. Gold fingerlings will work nice, too. If the red potatoes are fairly new potatoes and are thin-skinned, you don't even have to peel them.  

I would have tried to drain the excess dressing from the potatoes into a bowl. Then tried to thicken the dressing up a bit before adding it back.

I purposely make my potato salad the night before I plan to serve it. And I pour the dressing over the potatoes while they're still warm.....not hot, but warm. After I drain the potatoes, I mix olive oil and white wine vinegar together. After I chunk the potatoes and put them back into the pot they were cooked in, I pour the wine-oil mixture over the potatoes and put them on Low to dry off a bit. Then I put them into my bowl and add the dressing.

If you make the salad the day before, then it has a chance for all the flavors to "mingle" in the fridge. Check the salad before serving; you may need a pinch more salt (in my case, more pepper) or a bit more dressing.

That's a hoot about her not cooking the potatoes! That man must have really liked her to eat that potato salad.
