Looks like the reason those breeds are on the list is because of the flatter faces and more breathing problems. But I know that people show Persians and those other breeds and fly with them.

I agree on both thoughts.
If it is by any reason important for you to attach some sort of breed relation, not just Domestic Long Hair, call him MCO-mix...It may even be thrue! Why the vet wrote Persian I dont know. He isnt not even really like old type persians... Probably the vet meant simply longhaired cat.
It is well known most vets dont know much about breeds. They CAN be however be very skilled at practical handling and treatment of cats - I had myself met such vets.
And yes, the air company was prob afraid about breathing problems in these Persian-alike short nosed breeds. As Golden Kitty said - a well bred Persian doesnt have real difficulties. But I suppose the Air company doesnt want to risk complications - like law suits, or bad rumorours because it happened one of the cats something out of the ordinary...
And really nothing to wonder. Not all persian are well bred... Imagine a backyard breader taking his chance for getting some extra income. And lotsa of unhealthy cats to get rid off.... And A couple of millions to win perhaps...
