hey all

well its summertime now and no weather for cooked dinners

so the question is

What is yoyr favourite summertime meal? whether it be lunch time or tea time (which i think you all class as dinner time?)

Smoked chicken. My DH has a smoker and goes back and cuts apple or cherry wood and puts it in the smoker to cook the chicken.

OMG, it is the best. Falls off the bone and is so tender and moist. It takes about 3-4 hours to do. I will usually have a small side of baked beans or salad.

Absolutely yummy!

During the summer, we probably grill something every night. It's too hot to have the oven on to roast anything. Even with the AC, I don't want to turn the oven on, if I don't have to. (Although I probably should; DH has the air set to 72 degrees, so I'm walking around in a t-shirt and sweatpants!)

Tonight, for example, I'm making tequila-lime grilled shrimp over rice pilaf. With grilled stuffed zucchini. While the shrimp is marinating, DH and I plan to spend the time in the pool. Then he'll grill the shrimp and the zucchini while I'm finishing the rice.

So our meal prep time is spent in front of the grill, for the most part.

ETA: I forgot that we use the crock pot, too, for stew or if we want pulled pork sandwiches, but don't have the time to make it on the grill, like for a week night meal. I prepare the food that morning, throw it into the crock pot and plug it in back in the computer room, so I can shut the door; that way, the cats (meaning Mollipop!!!....honestly that girl is getting into trouble every time we turn around! She's "investigating" everything she find now!) can't get in there and knock it over.

Grilled or pan fried salmon with a salad. I like how a light meal can be so satisfying on a summer's evening.

Im down with BBQ+baked potato+corn idea too....thats a killer triad that makes me happy all summer every year....I really need to get a place with a balcony though so I can have BBQ every day like a previous poster mentioned. My "indoor grill" just doesnt cut it....

I like a huge salad with everything thrown in, I love a good antipasta which is an Italian known salad with salami, provolone and other good stuff thrown in, just use vinegar and oil and wow so yummy. Add some fresh Italian bread and I have a meal, Russ just loves it and the best part...there is no cooking involved.

I love salads, they are nice and cool and easy to eat when it's too hot.

Pisctacho encrusted Chicken ontop of a crispy salad with a raspberry dressing...OR ANYTHING thrown on the grill...I love BBQ!

BBQ!! I love grilled cedar plank salmon, marinated shrimp, corn on the cob, etc. Nom nom. I don't eat meat, but DH loves a good steak on the grill. Great sides dishes are potato/macaroni salads or grilled baguette with garlic butter. Mmm.

BBQ anything! Gary used to grill all the time - now with his pain all the time, it's a very special treat. (I can't just go do it - it'd be like taking his job away.
).

Also.... BERRIES and other fruits. Wash and eat.... Yum!

Fruit is really the only thing I eat much more of in summer. Nothing beats fresh fruit and homegrown vine ripened tomatoes.

Otherwise, it's the same meals as the rest of the year. If I can eat it without problems I tend to stick with something.

Grill, baby, grill!!!


We use hardwood charcoal. Doug just got me a charcoal chimney - I asked for it as part of my birthday gift.

I also love fennel slaw with champagne vinaigrette - don't make it much b/c Mom is not allowed to eat fennel b/c she is taking Coumadin.

locally grown produce - lettuce, corn, peaches, cherries, blueberries, plums - you name it. I know that is not a meal, but it's something I look forward to all year.
