Feeding multiple cats questions

Well til recently, I had one cat and I knew exactly how much he ate and what. Now I have two and that is becoming a little more difficult. Oscar, my first cat, is a neutered male a little over a year old. He is a big guy at 13.5 pounds, but doesn't look fat. He is very active and playful as well. Kattie is the new addition. She was my hospital cat at work, but I was able to take her home. She is a spayed female, approximately 6 years old, she is much lazier than Oscar, and likes to sleep during the day and is more active at night. She also has a mild case of megacolon which is undercontrol, and she is moderately chunky at 10.2 pounds.
Anyways, I feed canned twice a day and have a little dry out during the day. It used to be half a cup in the am for Oscar and 1/4 cup at night with half a 3 ounce can in the evening. He would usually leave some dry so I wasn't worried about over eating. Now Kattie is here and I have two bowls of dry and two dishes of canned, I cut back on Oscars dry, because I noticed him eating Katties food. It is probably the novelty of the new dish, I just don't want him putting on weight because there is extra food around.
I am currently feeding a mix of Blue Buffalo Wilderness Chicken mixed with Wellness Complete Health Salmon Flavor. I rotate Dry foods without ill effect as long as I mix them together in a tupperware container. Canned food is a mix of good stuff like Blue Buffalo, Evo, Wellness, ect along with the cheaper stuff like Fancy Feast, Friskies ect. It balances out the food budget since i am feeding more canned.
My question is for those of you with multiple cats, how do you make sure everyone gets enough to eat, and that one cat doesn't eat too much and the other not enough. I just don't want Oscar to pork out as I think he has the potential to get that way lol. The vet says he's a big cat but looks good. He does have a little paunch belly but is skinny every where else. I don't really want to feed a light or indoor cat food as they have too much fiber for Kattie.

Scheduled feedings with a measured amount for each cat in their own dish. If they try to switch dishes I direct them back to their own, but usually they're intent on finishing their own.

For the one that is a piggy and cannot have any other food (he's on a script food), he gets shut in a bathroom until he finishes his meal and the others have finished theirs.
