Corned Beef and Cabbage ?

The slow cooker thread made me curious. Does anyone have a tried and true crock pot recipe for corned beef and cabbage? I was going to Google a recipe, but it sounds as those some of you have made it this way, so I'm hoping someone has a recipe that they would be willing to share.

I just checked with Dottie. She says she hasn't done it in the crockpot. She thought it would take all day, since just boiling the meat takes a couple of hours. Don't put the cabbage in until you get close to the end of the cooking.

I did this one like this last year and it was quite good; I'm going to use it again. It's from allrecipes and it received some really good reviews, too.

Crock Pot Corned Beef and Cabbage

4 large carrots, peeled and cut into matchstick pieces (I used the equivalent or close enough of baby carrots and halved them)
10 baby red potatoes, quartered (you don't need to peel)
1 onion, peeled and cut into bite-sized pieces
4 cups water (I used 3 cups beef broth and 1 cup water)
4-pound corned beef brisket with spice packet
6 ounces beer
1/2 head cabbage, coarsely chopped

Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High (see my note!!).

Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour. (I put the cabbage in the crock pot about 30 minutes before the end of the cooking time and it was fine.)

My note: When I did this last year, I cooked it on Low; I thought then that cooking anything for 8 hours on high was too much. One of the reviewers agreed with that and suggested cooking it on low, too.

My only real comment is that the vegetables were a little mushy after cooking for 8 hours. But the flavor was very good.

I put the corned beef with all the juices in the bottom of the crockpot, then I sprinkle the seasonings over it and then add a quart of Kitchen Basics Beef Stock and then add in the potatoes and carrots. I cook it on low all day and it sure is yummy!

If you cut the potatoes into 1" or larger pieces and use the large baby carrots, then it isn't too mushy after 8-9 hrs.

I save all the broth that is left over and use it in bean soup which is super yummy!

Since I go to work REALLY early in the morning, I was thinking of just putting the corned beef and stock on low. When I get home (around noon) then bumping it up and adding the veggies. Does that sound like it would work?

what time are you actually going to eat it? depending on how many more hours you are going to cook it after you add the veggies, I wouldn't bother bumping it up. carrots and potatoes take a while to cook. If you are really impatient and want to eat right away, but haven't added the veggies yet, I would take some of the broth from the corned beef (about 1 cup or thereabouts) and put it in a skillet with the veggies on med - med high and cook them that way. cover and stir occasionally. cook until broth is gone.
