Marinade Recipes?

I'm looking for some marinade recipes for chicken and beef.

I could do a google search, and I will, but there are so many good cooks here that I was hoping that they would share their recipes.

I'm not a picky eater. But I don't like things too hot or too salty. I've tried soy based marinades and found them too salty for my taste.

Also, I would prefer to put together my own marinade instead of just using a bought one.

I have often used a GOOD italian or vinagrette dressing with added garlic

Most of your salad dressings on the grocery store shelf will double as very good marinades.I have used a good italian...mostly I buy the low fat type...and added a little dijon mustard.You can also bake your chicken in the oven with the salad dressings or do them on a grill as well.If you like making you own oil and vinegar dressing,there is no limit as to what you can make and use it for...choose your favorite spices and there you go!

Thanks. But I really want to stay away from bottled dressings and store bought marinades. Not only because they are loaded with salt and pricey, but because I more than likely have everything in my pantry that I need to make my own.

I did a Google search and found some really yummy looking ones. Many are citrus based with a variety of herbs. Some are fruit based with juice and herbs. And I found a yummy one that uses marmalade.

My friend uses beer as a base for steak marinade. It sounds disgusting, especially to a non-drinker like me
, but he makes some of the most delicious steak. I'm not sure what else is in the marinade besides beer, but I don't think he puts a great deal more in it.

Hmmm. Beer! Sounds interesting. I'll pick some up when I go to Safeway later today. Beer with molasses, some brown sugar, chopped up green pepper and onion, garlic and some liquid smoke and maybe some lemon juice sounds yummy!

For a BBQ marinade....add ketchup!

Did you get the crock pot recipes that I sent you? I had PM'ed some last week.

I have some nice marinades and will look for them.

Yes, I did. I haven't had a chance to print them off though. I've been in declutter mode and haven't used any of my new appliances, save for the microwave.

This week I want to do a roast beef in the slow cooker. Have to read the instructions though. The cooker has a temperature probe which I want to use so that I can get the roast medium rare.

The grill I plan on using tonight for a steak and some grilled veggies.

I had one of those George Foreman grills with the split lid that had dual temperature controls. I didn't really like that grill. You were very limited in how thick the food could be because the lid hinge didn't change elevation. And the top used to get too hot and burn the food.

I decided to get a Hamilton Beach flat electric flat grill, which will allow me to grill foods of all thicknesses. Plus it's easier to clean. Dishwasher safe and submersible in water, unlike the George Foreman one that didn't have removable grill plates and was awkward and messy to clean.

Although there are some good marinades in the stores, I prefer to use homemade. I tend to try to watch my salt intake and by using homemade marinades, I can can control how much salt I use. Here are some:

Dijon Mustard Marinade

2 cloves garlic, minced
1 Tbsp. soy sauce
2 Tbsp. lemon juice
½ tsp. salt
½ tsp. dried rosemary or thyme
Fresh ground pepper, to taste
¼ cup olive oil
2 Tbsp. Dijon mustard

Whisk together and spread on both sides of chicken breasts. Cover and marinate overnight in fridge. Grill chicken over medium heat for about 4 to 6 minutes per side.


Apple Thyme Marinade

6 oz can frozen apple juice concentrate, thawed
1/4 cup cider vinegar
2 Tbsp.table oil
3 Tbsp.sauce
1 tsp dried thyme leaves
salt black pepper

Combine juice, vinegar, oil, soy sauce and thyme in marinating dish or bag.
Add pork and marinate in fridge 8 hours, turning chops once or twice.

Rmove chops and discard marinade. season pork lightly with salt and pepper.

Grill 8-14 minutes over medium heat.

Firehouse Steak Marinade

1/4 cup vegetable oil
6 dried pasilla or ancho chiles, seeded and cut into strips
1 cup coarsely chopped onion
1 1/2 tsp chopped fresh garlic
1/2 cup beef broth
2 Tbsp. fresh lime juice
2 tsp cumin seed
1 1/2 tsp salt
1 tsp brown sugar
2 limes

In medium skillet, heat oil over med-low heat. Add chilies, onion, and garlic - saute until onion is tender.

DO NOT DRAIN - pour mixture into blender.

Add remaining ingredients (except limes) and blend until smooth.

If marinade is too thick, add additional beef broth.

Tenderize steaks with a mallet.

Pour half the marinade over steaks and refrigerate 30 minutes.

Grill steaks with 3/4 of remaining marinade until desired doneness.

Before serving, brush with remaining marinade and generously squeeze fresh lime juice over steaks.

This is enough for 2 pounds of steaks.

Jake's Boss Barbecue Rub

1-1/4 cups packed dark brown sugar
1/4 cup coarse salt (I used less than half of this)
1/2 cup paprika
3 Tbsp. dried parsley
2 Tbsp. dried basil
2 Tbsp. dried oregano
2 Tbsp. dried thyme
2 Tbsp. dried onion flakes
1-1/2 Tbsp. dried Worcestershire (optional, don't have any)
1-1/2 Tbsp. Lemon Pepper (can use homemade or commercial)
1 Tbsp. garlic powder
1 Tbsp. MSG (optional, I didn't use)
1 tsp. ground allspice
1 tsp. ground cinnamon

Combine all ingredients in a bowl and stir or whisk to mix. Transfer to a large jar, cover and store away from heat and light. The rub will keep for several months. Makes 2 cups.

Note: I use this on a flank steak. I put the rub on both sides of the steak early in the morning, then wrap the plate in plastic wrap and store in the fridge until around 2:00 or so in the afternoon. (You can also do this the night before and keep it in the fridge overnight.) Then we just grill the steak to our desired doneness and slice it very thinly across the grain. I use quite a bit of the rub; that way, we get a good "crust" on the meat while grilling.


Tri-Tip Marinade

1/3 cup soy sauce
2 T. brown sugar
1 T. red wine vinegar
1/2 tsp. ground ginger
1 clove garlic, minced
2 T. vegetable oil

Combine and pour over meat. Cover and chill for 6-8 hours (turning occasionally) or overnight. Bring to room temp before grilling for approximately 12-15 minutes per side over direct medium heat.


Citrus Marinade

This is simple and very good marinade for pork tenderloin. You need to marinate them overnight.

1 T. frozen orange juice concentrate
2 T. ketchup
1 tsp. orange zest
1 T. apple cider vinegar
1 tsp. hot sauce
1 tsp. sesame oil
2 tsp. soya sauce
1 tsp. cumin

Not really a marinade, but I cooked a steak tonight. I put some olive oil into a bowl, added some onion and garlic powder and some salt and citrus pepper. Then blended in some liquid smoke. Mixed the steak up in it and put it on the grill. Turned out pretty tasty. The liquid smoke gave it an outdoor grill flavour.
