Lactose-free birthday cake

I need your help guys!

It's a friends 30th birthday on Monday, and her husband had planned something special for her, but he did a last minute flight back to Australia last night because his mum is in hospital and very ill.

She's rallying together some friends so we can do something still, and I'd like to do her a special birthday cake. She's lactose intolerant, so it has to be a dairy-free cake.

She LOVES chocolate, so I'd love for it to be chocolate based. I'm guessing I can probably just find lactose-free milk/margarine etc. to do a mud cake or something similar?

Anyone got any really good cake recipes?

My DH is Lactose intolerant and we've found we can use any boxed cake mix so long as there are no lactose ingredients in it, then just substitute lactose free milk (and maragrine if necessary)

The organic and health food aisles often have a decent selection of lactose free cake mixes.

This is a recipe my family has been using forever. The cake is very chocolatey and moist.

Mix:
3 cups flour
2 cups sugar
2/3 cup cocoa
2 tsp. baking soda
1 tsp. salt

Add:
2/3 cup vegetable oil
2 tsp. white vinegar
2 tsp. vanilla

Mix and add:
2 cups water

Grease & flour a rectangular pan, 350°F, c. 40 minutes

We've substituted vanilla Silk for milk in cake recipes before I was diagnosed with hypothyroidism (it can cause lactose intolerance). It worked fairly well. *shrug*

Also, some cakes can be made with sour cream, which has very little lactose.

that reads like a "wacky cake" - no eggs or milk. I was making something similar when my littlest niece presented with an egg allergy. Lucky for her she outgrew it.

It's a Depression era recipe my grandmother (born in 1907) got from a co-worker with around a dozen kids. It tastes so rich people don't believe it doesn't contain eggs, butter or milk, and it's perfect for Vegan family members or friends as long as you're careful about what you ice it with.

I have no recipes to share, but I wanted to say it is a wonderful idea to think of her lactose intollerance. I'm also lactose intollerant, and my hubby buys lactose free milk. I still eat all the cheese I want (even though it makes me not feel well.) I have pills to help me digest lactose.

You are a wonderful person
I think it is great when people look out for their friends who may have allergies or what ever to food.


Be safe.

I have a friend with lots of food allergies, so I just keep packages with ingredients for him to read before he eats anything we may buy for our DnD Game nights. (we have to take care of our DM, or no gaming!)

Tricia, that cake looks great, I'll be using that recipe! Now I have to find fun ways to decorate it


Let's just hope I can find all my baking stuff on Monday given we're packing up the house and moving tomorrow
