My Goose is Cooked

With knowledge that nobody would be around New Years I figured I'd cook a Goose that I'm sure nobody in the family would really enjoy. Boy was I wrong. Every time I went near the stove I got the claws pulling me back as to demand some of that wonderful meat. Four cats.. that's forty claws! I carved myself some of the bird and we all had a taste. Now they're gone off for a nap. I think that's where I'm headed too. Happy New Year!

I've never had goose before. What does it taste like? How do you cook it? Where did you buy it? I don't think I've ever seen it in the supermarkets here, although I suspect one could buy it at a Mennonite farm.

Goose is kind of like the dark meat on turkey - but richer.
Basically, it's all dark meat... and it's very fatty, so it's best to roast it on a rack. But if you like dark meat on a turkey, you'll probably love goose! The only problem with goose is that if they're big they tend to be... tough. You have to go with one that's smaller - like less than 15 pounds.
But basically you treat them like any bird. They're great smoked, roasted, stuffed, cajun style.... Gary cooks goose every once in a while - but always at someone else's home because yeah, the cats go NUTS!

Mmmmm, goose is yummy, we had it last new years day, don't reckon you will get much of it though if you have 40 claws after it

I got the bird frozen at the supermarket. You can get them online from goose farms. This was our first goose so I kept it simple. At about ten pounds it fit right in one of those graniteware covered roasters. I roasted it on a rack with just a tad of water at 400f for 1.5 hours then lowered the heat to 325f for another 1.5 hours. I let it go uncovered the last 30 miniuts finished with a marmalade glaze. Most all of the fat rendered off and the meat is dark and rich. I'd like to do some more research on citrus sauces before I do another one. If your not a fan of dark meat on a turkey or enjoy roast duck then I'd have to say goose is not for everybody. The cats certainly enjoyed it.
As time goes on I can see our cats change their habits. The claw thing is not new but they seem to do it a lot more now. The new thing is they rocket across the room then jump over you head if your not up on time in the morning.

I had goose once many years ago and loved it. I love the dark meat on turkey and rarely eat the white meat so goose was just great for me. My X-MIL had cooked it and it was just fantastic.

Indeed I did save the fat. Got about 24 oz. I put it in the freezer for now. I think these birds were highly sought after when people were more self sufficient in earlier times. I checked on the net and you can buy goose fat for about 8 or 9 bucks a pound. Looks like Goose Fat Potatoes are on the menu soon. And just maybe a trip to the cardiologist!

We had it some years ago at Dottie's folks' place. Her dad was a big fan of goose. It was OK. I don't like white meat, so it worked out well for me.

Well, sounds good to me! I like trying different foods. I really like duck, so I think I'd probably enjoy goose, knowing that it's dark and maybe a little "gamey".

Dont like goose, too gamey.
I am a person that will eat anything not starring back at me
I agree the fat is delish, fry some taters, onions and bacon up in that, go to hospital, get new heart and all vessles leading up to said organ.

I've never had goose, but would love to. I love duck, and I certainly don't mind "gamey". One of these days....
