So I was in the grocery store and I found a bag of frozen Yuca, which made me seriously happy because they are delicious!! Now that I have this wonderious root...Does anyone have any suggestions for preparing them? I know I should treat them like a potato but I was wondering if there is any particular way they should be cooked. Or a way that is REALLY good?

Very simple to make...
Just Peel them (if they aren't peeled already), boil them until they are very soft...
You can serve them jut like that, and put salt and butter on the top, or.... They are very very soft, softer than a potato. You don't want them firm. The sides get almost transparent, translucent...

Boil them, but take them when they are still firm, kind of like a potato. now cut them in strips (in 4s), and fry them in butter; serve.

You can also use them to thicken up sauces, like when you are cooking fish and such... YUMMY!!!!!!!!

There are only 2 things you eat with yucca: salt and butter -

Soup soup soup soup! OMGoodness, yucca soup! The simplest is to dice a large onion and saute it in a soup pot. Peel and chop the yucca, and then put in the pot with enough broth to cover it. Bring to a boil, reduce and simmer until the yucca is soft, then puree. Mmmmm.

Yucca is also known as cassava, so try googling it for even more recipes. There are some fabulous carribean and west african recipes out there.

In Brazil we cook a LOT with it... But it can get fancy
We even make cake of it, yes, sweet, with coconut... it is to die for!

I am cutting down a yucca from my garden - 7 of them and they are the Spanish Bayonet variety - so big and so many sharp spikes...I would hate for someone to get hurt from them!! I can actually make food from them??? I never knew that!

Angelo steams the root, sautees onions, garlic and salt/pepper and dumps the sautee on the yucca
