I wish I had seen this earlier; my mother had a good recipe, and so rich it would drill the fillings right out of your teeth!

Making fudge is/can be really tricky.

But I think this is the recipe my dad uses. Of course he makes changes to every recipe he follows so it's never the same every year, but it's always good!

http://www.christmas-cookies.com/rec...asy-fudge.html

I don't recommend the microwave method at all as I think the fudge doesn't taste as good.

Man..I miss being able to eat fudge...
I have to stay away from my dad's for the holidays because he makes a LOT of fudge in all different flavors.

Edit - I forgot to add that you can substitute the semi-sweet chocolate for any type of baking chips. =) My favorite is butterscotch. And the nuts are always optional.

Dottie just handed me my mother's fudge recipe. Man, it caused a twinge; it's in my mother's handwriting!

1 cup Nestle's Quick
1 1/2 cups sugar
3/4 cup canned milk
1/4 cup margerine
pinch salt

Mix these together and coot to 234 degrees F or soft ball in water stage. Remove from heat.

Stir in 1 tsp. vanilla, a large spoonful each of peanut butter and marshmallow creme, a handful of coconut and 1/4 cup chopped nuts. Stir until well mixed and pour into a buttered 8" x 8" pan. Place in refrigerator until partly cooled, cut into squares before it hardens completely.

It wont matter what brand it is, marshmallow fluff is marshmallow fluff.

You could go the whole nine yards and melt your own marshmallows for it...

Melt some butter or margarine in a pan, about 3 tablespoons, low heat, add about forty marshmallows, stir until the marshmallows are melted. low heat, lots of stirring. don't rush it.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~…
This is a fantastic clone for the store-bought marshmallow fluff and one I have used for years, it's easy to make and so much cheaper than the store-bought, I always use this instead of the real thing and it freezes well also, see note on bottom --- use this in any recipe calling for marshmallow fluff, I have also made this using dark corn syrup it is just a little darker in color but it works just as well
* 3 egg whites
* 2 cups light corn syrup
* 1/2 teaspoon salt
* 2 cups icing sugar (confectioner's)
* 1 tablespoon vanilla extract
In a large bowl, combine egg whites, corn syrup and salt; beat with mixer in high speed for 10 minutes or until thick.
Add in icing sugar; beat on low speed until blended.
Beat in vanilla until blended.
Use this in any recipe called for marshmallow creme.
*NOTE* This recipe makes a lot of fluff, but may be frozen for later use, just remove from freezer and stir well with a spoon, or it can be refrigerated for up to 1 week, just make sure to stir well with a spoon before using.
We had this at our openhouse today and its amazing, its similar to the fluff one posted, but with marshmallows but the candy canes add a Christmas theme to it
2.5 cups granulated sugar
0.6 cup evaporated milk
2 cups miniature marshmallows
1/4 cup butter
1/4 tsp salt
1.3 cup chocolate chips (semi sweet or milk chocolate)
1 c. chopped candy canes
1 tsp. vanilla
1 tsp mint flavouring
To a large pan on medium heat, mix butter, milk and salt until butter is melted, then add sugar - heat and stir until sugar is melted evenly and no clumps. Add marshmallows and heat until melted, stirring occasionally. Add flavouring (vanilla and mint) and chocolate and stir until melted. Stir in candy cane pieces, keeping some for the top. Pour into baking pan, sprinkle on the rest of the candy canes while its still hot and refrigerate.
I have a very easy one for Peanut butter/chocolate fudge. It is very good!
1 tub of chocolate icing.
Peanut butter.
The amount of peanut butter depends on your liking. Put a little bit of peanut butter into the icing and taste test until you think it is the right amount. Mix the chocolate icing and peanut butter together. Melt in microwave (1-2 minutes). Put in square pan and put in refrigerator to let it set. It is really good. I promise!
I couldn't find my recipe card...but I use the Borden's Eagle Brand Foolproof Fudge recipe. I did a search for the recipe and found it, but I am so hopeless on the computer that I don't know how to paste the link.
