Shortbread Cookies: Recipes?

I'm going to try my hand at some shortbread I think and was wondering if anyone had their favorite recipes to post?

I have a couple here, but haven't tried either.....

Get thee to the grocery store and look on the Canada Corn Starch box, the recipe on there is excellent. Just make sure you use butter, not margarine

This makes the best shortbread I've ever had...
Seriously, I think I ate the whole batch in one weekend!

One of my favorites, from allrecipes.com:

Shortbread Cookies
Makes about 24-36, depending on size. If you use a cookie press, you'll get a lot more.

2 cups butter, softened
1 cup white sugar
2 teaspoons vanilla extract
4 cups all-purpose flour


1.Preheat oven to 350 degrees F (180 degrees C).
2.Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
3.Put through cookie press and form cookies onto baking sheets. Bake 10 - 12 minutes.

Note: Feel free to substitute orange or lemon extract for the vanilla. And do use butter for the best flavor.

I just found a recipe for short bread cookies made with Truvia instead of sugar (the hubby to be is diabetic). I have not tried to make it yet, but PM me if you want it and i will gladly type it up for you
