Christmas Cake

You're more than welcome! I did edit and make a correction (didn't notice the pencil markings in the margin). For the orange juice, it has to be between 1/2 to 2/3 cups. I don't know if you could just use orange juice for that or not. What do you think? Cause I'm REALLY craving this now. I may make it for Thanksgiving.

Like you, it will probably wait until I retire before I actually use it, but that's not that far away, and I would love to have it. I'm pretty sure Lil's recipe came over from Scotland when her family came early last century.

Now THAT sounds yummy!! I may have to try that sometime when there's a party or something where I can share it! (i really wish there were recipes for 1 cookie, or 1 piece of cake. that's all i usually want, so i rarely bake.
)

LOVE fruit cake!!! Actually have some in the microwave oven for later.

That's why god invented freezers.
We never actually froze any of this kind of cake, but other cakes have been frozen as well as cookies so I don't see why it wouldn't work. Oh, it's great if you warm it up in the microwave and put vanilla ice cream on it!

Personally I would buy a couple oranges and squeeze my own juice - it's always better IMO.

Dark fruitcakes have been a tradition in my family for as long as I can remember.I make mine the day after Thanksgiving....8 of them.Then the next day is when the fun begins!I wrap them in cheesecloth,then tightly in foil.At least once a week...sometimes more...I mist them with dark rum and rewrap.I think my mother used brandy once,and I much prefer the rum.By the time Christmas gets here,they are wonderfully moist and flavorful from the rum.My grandma used to say the liquor helped the fruitcake "ripen".I store my extras in the freezer.I watch in the grocery store after the holidays because they usually mark all the fruitcake stuff down considerably.I stock up and stick it all in the freezer,including the nuts.Keeps for a long time!

We are not a family of store bought baked goods, so there's always a home made one at xmas time.

I don't like fruit cake though, so just have the ice cream that goes on the side.

Mmmmm fruit cake with warm brandy custard - mmmmmmm!!!!

My nan probably has all the fruit soaking in alcohol for the fruit cake by now
She's English and does a good traditional fruit cake which is to die for. Some years the booze masks most other tastes


Hubby and I love dark fruit cake, we will usually just buy some from the Australian store nearby, and have it with custard. I might try making it this year since I wil probably have some time - it's quite time consuming though.
