Winter squash

I love squash, zucchini, etc and almost live on it during the summer but I've never cooked a winter squash before. They had a special at the market yesterday so I picked one up. It was a Delicata squash (white with green stripes).

They had them, acorn, butternut...all the pretty ones, along with tini-tiny pumpkins. I think they were selling them more for decoration than for eating. But after I got home I checked online and found a very simple recipe. Tried it and OMG!!!! It was delicious!! I HAVE to make it for Thanksgiving.

All you do is slice it and quarter the slices. Cut the skin off and take out the seeds (it's almost like a pumpkin inside). Put in a covered baking dish with about 1" of water and bake until soft (about 1 1/2 hours). Take it out, drain most of the water off, sprinkle with brown sugar and add a little butter and bake for about 15 more minutes. OMG...it was almost like dessert. In fact, I wanted to put ice cream on top of it. It was so good!!

Now, I want to try butternut squash soup.

Anyone else have any personal recipes for winter squash?

that sounds good! I don't eat squashes very much (except zuccini) but I really should as they're easy to bake and in season now.

As I had a glut of both summer and winter squashes in the garden this year, I have been experimenting with ways to cook them. I cook them with as little water as possible - either in steam or by baking them in big chunks or slices, then puree them and add a pinch of nutmeg. You can also half cook them, so they are still fairly firm, then slice them up thinly and fry them in olive oil and garlic with other vegetables so they are golden crispy on the outside. I love them.

YES, YES, Please!!!!! MIL and I are going to try to make butternut squash soup tomorrow night, but that sounds just awesome!

That's the way I have always cooked squash. It's really yummy!!!! I can't have it anymore because of this stupid high cholesterol and no butter thing. I'm getting hungry now!
