Linday, you can't just tease with the recipes like that! My version came out alright, added shrimp and calamari and we drank the bottle of wine I had to open for the recipe. We're having leftovers tonight.

I had a chicken salad sandwich and some chips and a candy bar for dessert.

As predicted, I'm not energetic enough to think and THEN to cook...and the verdict is...

ME: Dinner -- pizza or Vietnamese? or do you have a better idea?
HIM: Could we do Vietnamese? Please?

Suits me. Takes care of tomorrow, too. I'll call in a while, and barring the unforeseen, it will be our usual selection: Calamari Julienne, Drunken Prawns Royal Citron, Duck Anisette, Spicy Vegetable Basil, and Vietnamese Fried Rice.

I love Vietnamese!

We had low carb, high fiber tortillas w/ roast beef and provelone cheese, lettuce and onions wraps. Having WW approved chicken and veggie soup. It's getting tiresome trying to figure out dinner. I was really good today. I had a Bagelful and 1/2 of an Asian Pear for breakfast and a soft chicken taco for lunch. My blood sugar was 111 tonight, it was 128 last night. DH went out for breakfast and who knows what he else he ate while I was gone...his blood sugar was almost 300. I can not follow him around all day and make him eat right. GRRRRR!

I have a large spiral ham that will be going in the oven later. I'm not sure of the sides yet.

The sun-dried tomatoes are optional but the artichokes are not.


Have you tried deep-fried camenbert? That's one of DD's favourite. Just cut in fair sized cubes, dip in beaten egg, then bread crumbs, then egg again and then crumbs again, then deep fry. Delicious.

I got some red carrots yesterday at the Farmers' Market - I love trying all these different veggies.

Tonight it is Leek and Potato soup that I made last night and pasta with a fresh tomato and basil sauce with fusili to which hubby wants sweet Italian sausage with a spinach salad to finish off. For dessert, probably just fruit cake and/or oatmeal raisin cookies. Of course we could come to your house for dessert.

Definitely like the sound of that. As if it weren't decadently creamy and rich enough already!

I'm sure we'll have a fair amount of spare cake for dessert!

Wish I had time to wander over to Ontario tonight! Lots of yums there. However we'll enjoy our reruns of Vietnamese.

And Kim? You'll do fine, and you'll be hooked.
