I have so much homemade pesto in the freezer that I need to put a dent in it. Tonight is pesto over pasta with chicken.

I am making Beef Stew in the crockpot today. My brother dropped off some stewing beef yesterday so I just had to give it a try. It's just your basic recipe with potato's, carrots, and frozen peas. I also add extras as well, frozen corn, and green beans..It is all very yummy.

Yesterday we had unexpected company early in the evening, which kind of rearranged our evening. I had not really settled on what to do for dinner, but all the ideas went straight out the window and we had salmon goulash on toast. Dead easy, quick, satisfying.

Tonight? I guess I'll revisit the possibilities from yesterday.
We'll see.

Well, having pondered the matter several times today, I've just realized that the other thing that got somewhat rearranged last evening was laundry -- like it didn't happen and is now critical -- so I think I'm going to concentrate on getting that done and order pizza for dinner. It's actually been longer than usual since the last pizza dinner, so I don't think I'll get any argument from The Boy -- as if I ever do.

Tonight will be something with ground beef as I have it in the refrigerator. There is about 2 lbs so I'll probably make a meat loaf for tomorrow night and maybe Salisbury Steak or home made burgers for tonight.

I got some chicken wings that were on special when I was shopping Monday so am going to make up a batch for dinner. Haven't decided yet what flavors I am going to make. Most likely Hot BBQ and Honey Mustard because they are my favorites.

Quick supper tonight. Omelettes, probably with mushrooms, and maybe some other friendlies.

When we have omelettes, John loves when I fry up some onion, mushroom and fresh tomato (peeled and chopped) with some herbs like oregano and basil in butter, of course, and stuff the omelet with that. I sometimes will do up some of that good stuff when I have some over ripe tomatoes and just have it on scrambled eggs and it's wonderful that way as well.

You're right, Linda -- we must have been twins.
Those are precisely the kind of "friendlies" I was referring to.

Comfort food for me tonight. Grilled cheese sandwich with tomato soup and crackers. For dessert some Mango Frozen Yogurt. All very yummy.

Pork for us. I think I have tenderloins in the freezer. I also think I have some schnitzel-able pork. I'll see which The Boy would prefer. What that choice is will determine what happens in the way of veg and starch. Either way, it will be a low fuss meal, since we had a somewhat late night last night, and I'm dragging my butt at this point. I may do a pecan pie for dessert -- or I may not.
We can always have Gelato Spazzacamino.
