No question about it!!


So, the smokies happened but I revised the salad. The mangoes weren't quite as ripe as I thought, so I did Greek instead. I'll have to make sure I use avocado for lunch tomorrow, though, cuz they ARE ripe.

Ok, so the chicken and rice experiment didn't quite work out last night
Must work on that recipe!

Tonight is cheese ravioli with marinara and garlic toast.

We just finished the rest of it. The recipe needs a slight bit of tweaking but I would definitely make it again. It got good reviews from Aaron and my mother. If anyone is interested in the recipe, let me know.

I have some leftover cooked noodles from Friday night that I'll do something with, probably pesto and tomatoes or something like that.

Cranberry Meat Loaf

Sauce
2 cups cranberries
1 cup water
1 cup sugar

Meat Loaf

2 cups ground cooked ham
1 pound ground raw turkey breast
1/2 cup dry breadcrumbs
2 eggs
3 Tablespoons chopped fresh parsley
1 small onion finely chopped
1/2 teaspoon salt
1/8 teaspoon ground black pepper

To make the sauce - Pick over cranberries and rinse thoroughly. Boil the sugar and water in a saucepan for 5 minutes. Add the cranberries and boil, without stirring, until all the skins pop, about 5 minutes. Remove from heat and cool in pan.

To make the meatloaf - Combine ham, turkey, breadcrumbs, eggs, parsley, onions, salt and pepper. Add 1/2 cup of the sauce and blend well. Form the mixture into a round loaf, place on a baking sheet and bake in a preheated 375 degree oven for about 45 minutes. Pour the remaining sauce over the loaf and bake for 15 minutes more.

The first night we found the sauce to be much to sweet, but by the next day it was fine. I would probably either cook the sauce further in advance next time or cut back a bit on the sugar. The loaf by itself was good, but could have used a little something. Perhaps a bit more onion or the addition of sage, rosemary or thyme?

That looks good, Karen, thanks. I think you're right about the addition of one or more of those herbs -- I think it would add some body to the flavour of the loaf. I'm leaning toward either sage or thyme or a little of both.

I'm getting ready to cook up fresh venison backstrap, just butchered yesterday. My BIL Fred (Nugent...lol!) is quite the hunter, lucky for us. I'm going to make venison gravy, mashed potatoes, and some steamed fresh sesame green beans. The gravy and potatoes are the bad guys in this meal, but they taste so gooood!

I'm making fajitas tonight. The beef strips are just marinating at the moment and I'll fry them up with onion, red capsicum and serve with lettuce shortly. Yum.

i just wrote up what we are having for the rest of the week as i just went through our fridge and did not feel like a big shop today as we already had so much!

tonight its Fettucini with tomato and mascarpone sauce with rocket on top!!

I'm just on my way upstairs to convince a large thick pork chop to become Jaegerschnitzel. We've had a fair bit of pasta lately, so I won't do noodles, but some panfried spuds will go nicely with it, and some garlic carrots. And I think one of those mangoes on the counter is ready to be consumed for dessert. See ya later!

New recipe here again tonight. It's chicken baked with a mixture of butter, maple syrup, almonds, lemon juice, lemon rind, salt and pepper.
